%20It%20was%20high%20time%20to%20revisit%20this%20creamy%20Italian%20rice%20dish.%20While%20the%20last%20couple%20of%20days%20have%20been%20exceptionally%20mild%20and%20warm%20here;%20a%20cold,%20stormy%20front%20is%20moving%20in%20tomorrow.%20This%20recipe%20is%20the%20perfect%20hearty,%20stick-to-your-ribs%20comfort%20food%20for%20a%20dark,%20blustery%20day.%20I%20found%20a%20recipe%20for%20Porcini%20Ham%20Risotto%20on%20the%20Taste%20of%20Home%20website,%20and%20then%20I%20modified%20a%20few%20of%20the%20ingredients%20to%20create%20this%20Ham%20and%20Cheese%20Risotto.%20I%20didn't%20have%20dried%20porcini%20mushrooms,%20but%20I%20did%20have%20regular%20button%20mushrooms%20and%20so%20I%20used%20those.%20I%20have%20heard%20lovely%20things%20about%20the%20porcini%20mushroom,%20but%20honestly,%20I%20am%20always%20a%20little%20scared%20to%20try%20new%20types%20of%20mushrooms.%20While%20I%20can%20add%20plain%20old%20button%20mushrooms%20and%20morel%20mushrooms%20to%20my%20safe%20list,%20I%20am%20violently%20allergic%20to%20both%20the%20portabello%20and%20shiitake%20mushroom.%20Disappointing,%20considering%20I%20really%20enjoy%20both...for%20about%2015-20%20minutes...then%20it's%20all%20downhill%20from%20there.%20Ugh.%20This%20little%20allergy%20really%20inhibits%20my%20sense%20of%20adventure%20when%20cooking%20with%20fungi.%20These%20days%20I'm%20too%20busy%20to%20spend%20an%20entire%20night%20in%20the%20restroom%20in%20the%20name%20of%20experimentation,%20therefore,%20I%20don't%20even%20bother%20trying%20a%20'shroom%20that%20I%20am%20unfamiliar%20with.%20Bummer.%20Anyhow,%20now%20that%20I%20have%20burdened%20you%20with%20my%20digestive%20woes,%20I%20will%20proceed%20with%20the%20creation%20of%20this%20ham%20and%20cheese%20risotto.%3C/p%3E%3Cp%3EI%20heated%201/3%20cup%20of%20butter%20in%20the%20bottom%20of%20a%20soup%20pot%20(the%20high%20sides%20come%20in%20handy%20with%20all%20of%20the%20stirring%20that%20is%20required%20to%20create%20risotto),%20then%20added%20in%20diced%20shallot,%20chopped%20mushroom,%20and%20minced%20garlic.%20Saute%20until%20tender.%3C/p%3E%3Cp%3EThen,%20stir%20in%201-1/2%20cups%20of%20arborio%20rice%20until%20coated%20with%20the%20butter.%3C/p%3E%3Cp%3ECook%20and%20stir%20until%20the%20wine%20is%20absorbed.%3C/p%3E%3Cp%3EWhile%20all%20of%20the%20chopping%20and%20sauteing%20were%20happening,%20I%20was%20also%20heating%20some%20chicken%20broth%20on%20the%20stove%20top.%20Keeping%20the%20broth%20hot%20is%20important%20because%20it%20helps%20to%20maintain%20an%20even%20temperature%20while%20cooking%20the%20risotto.%20Adding%20cold%20liquid%20to%20hot%20rice%20lengthens%20the%20cooking%20time.%3C/p%3E%3Cp%3EI%20add%20the%20broth%20to%20the%20risotto%20ladle%20by%20ladle%20(or%201/2%20cup%20at%20a%20time)...%3C/p%3E%3Cp%3Eand%20then%20stir,%20stir,%20stir,%20over%20the%20heat%20until%20the%20liquid%20is%20absorbed.%20Then%20add%20more%20broth%20and%20stir,%20stir,%20stir,%20some%20more.%20Repeat%20and%20repeat%20again%20until%20ALL%20of%20the%20broth%20is%20absorbed%20into%20the%20rice.%3C/p%3E%3Cp%3EHere's%20the%20goal:%20a%20VERY%20creamy,%20near-tender%20rice.%3C/p%3E%3Cp%3EVigilant%20stirring%20lends%20itself%20to%20a%20creamy%20finished%20product.%3C/p%3E%3Cp%3ESome%20people%20actually%20refrain%20from%20making%20risotto%20either%20because%20it%20seems%20complicated%20or%20they%20don't%20want%20to%20stand%20by%20the%20stove%20for%20all%20of%20this%20stirring.%20Here's%20the%20thing:%20Once%20you%20realize%20you're%20mostly%20committed%20for%2020%20minutes%20of%20hovering%20over%20the%20pot%20and%20stirring,%20it's%20no%20big%20thing.%20Plus,%20if%20you've%20ever%20tasted%20a%20good,%20creamy%20risotto,%20then%20you%20know%20that%20taking%20a%20mere%2020%20minutes%20out%20of%20your%20day%20to%20stir%20a%20pot%20is%20totally%20worth%20it.%3C/p%3E%3Cp%3EOnce%20all%20of%20the%20liquid%20is%20absorbed%20into%20the%20rice,%20then%20add%20in%205%20oz.%20of%20shredded%20cheese.%20(The%20original%20recipe%20called%20for%20fontinella,%20but%20I%20got%20a%20great%20deal%20on%20an%20acceptable%20substitute:%20Asiago,%20at%20my%20local%20ALDI%20store.)%20Whatever%20you%20choose%20to%20use,%20stir%20until%20it%20melts.%3C/p%3E%3Cp%3EThen%20stir%20in%201-1/2%20cups%20of%20chopped%20ham.%20I%20just%20used%20whatever%20was%20on%20sale%20from%20my%20local%20deli,%20but%20if%20you've%20got%20leftover%20ham%20from%20Christmas%20or%20Easter,%20this%20recipe%20would%20be%20a%20delicious%20way%20to%20use%20it%20up!%3C/p%3E%3Cp%3EIn%20about%2030%20minutes,%20dinner%20was%20served!%20I%20sprinkled%20mine%20with%20a%20little%20fresh%20parsley.%20It%20was%20yummy.%20Like%20I%20said,%20stick-to-your-ribs%20comfort%20food!%20Often,%20risotto%20is%20a%20side%20dish,%20but%20this%20one%20is%20hearty%20enough%20to%20be%20the%20main%20course.%20I'd%20recommend%20serving%20it%20alongside%20a%20salad.%20:%20)%3C/p%3E%3Cp%3EHam%20and%20Cheese%20Risotto%20inspired%20by%20Taste%20of%20Home's%20Porcini%20Ham%20Risotto%3C/p%
