%20%20Unfortunately,%20I%20was%20limited%20by%20the%20ingredients%20in%20my%20pantry,%20so%20I%20couldn't%20try%20out%20some%20of%20the%20fabulous%20suggestions.%20%20I%20did,%20however,%20have%20a%20supply%20of%20mango%20buttercream%20in%20the%20freezer%20that%20my%20fancy%20chef%20sister%20left%20here%20after%20making%20my%20mom's%20wedding%20cake%20in%20the%20fall.%20%20I%20absolutely%20love%20my%20sister's%20raspberry%20mango%20wedding%20cakes,%20so%20I%20thought%20I'd%20use%20those%20flavours%20as%20inspiration%20for%20my%20adaptation%20of%20this%20recipe%20for%20a%20simple%20white%20cake.%3C/p%3E%3Cp%3Ered%20food%20colouring%20(optional)%3C/p%3E%3Cp%3ESift%20dry%20ingredients%20together%20and%20set%20aside.%20%20Beat%20egg%20whites%20until%20stiff%20(3-5%20minutes)%20and%20gently%20transfer%20to%20another%20bowl.%20%20Beat%20butter,%20sugar,%20and%20yogurt%20until%20creamy,%20then%20add%20in%20egg%20yolks,%20vanilla,%20and%20food%20colouring%20and%20continue%20beating.%20%20Gradually%20add%20dry%20ingredients,%20mixing%20well.%20%20Using%20a%20spatula,%20gently%20fold%20in%20the%20egg%20whites.%20%20Transfer%20to%20cake%20pans%20that%20have%20been%20lined%20with%20parchment%20paper.%20%20(I%20only%20have%20two%208%22%20cake%20pans%20so%20that's%20what%20I%20used,%20although%20the%20original%20recipe%20suggests%20using%20three%209%22%20pans.)%20%20Bake%20at%20350%20F%20(original%20recipe%20suggests%2020%20minutes,%20but%20since%20my%20cakes%20are%20smaller%20and%20there%20are%20only%20two%20of%20them,%20I%20baked%20them%20for%20about%2035%20minutes.)%20%20Transfer%20to%20a%20cooling%20rack.%3C/p%3E%3Cp%3EWhen%20cakes%20are%20cool,%20slice%20off%20the%20top%20of%20one%20cake%20so%20that%20it's%20flat.%20%20Turn%20the%20other%20cake%20over%20so%20that%20you%20have%20two%20flat%20surfaces.%20%20Spread%20one%20cake%20with%20raspberry%20jam,%20and%20the%20other%20with%20mango%20buttercream%20(my%20apologies,%20I%20don't%20have%20an%20actual%20buttercream%20recipe%20for%20you%20since%20my%20sister%20made%20it...%20but%20find%20a%20good%20one%20on%20the%20internet,%20and%20then%20mix%20in%20some%20mango%20pur%C3%A9e.)%20%20Turn%20the%20unsliced%20cake%20right-side-up%20and%20set%20it%20on%20top%20of%20the%20other%20cake%20(so%20your%20two%20fillings%20meet%20in%20the%20middle),%20and%20then%20ice%20with%20regular%20icing.%20%20(Unfortunately%20my%20mango%20buttercream%20looked%20a%20little%20chunky%20after%20being%20thawed%20out,%20so%20it%20wasn't%20an%20option%20to%20ice%20the%20cake%20with%20this%20stuff,%20even%20though%20it%20tastes%20delicious!)%3C/p%3E%3Cp%3EMy%20icing%20skills%20are%20what%20some%20would%20consider%20appalling,%20so%20I%20whipped%20out%20the%20other%20bag%20of%20frozen%20goodness%20that%20my%20sister%20left%20in%20my%20freezer%20--%20fondant%20icing!%20%20I%20defrosted%20it,%20rolled%20it%20out%20on%20a%20floured%20surface,%20and%20then%20laid%20it%20on%20top%20of%20the%20cake%20and%20trimmed%20around%20the%20edges.%20%20It's%20not%20as%20smooth%20and%20flawless%20as%20my%20sister's%20cakes%20are,%20but%20that's%20why%20people%20used%20to%20pay%20her%20the%20big%20bucks%20to%20make%20wedding%20cakes!%20%20She%20can%20also%20make%20amazing%20sugar%20flowers%20and%20all%20sorts%20of%20fancy%20sugar%20designs.%20%20I,%20on%20the%20other%20hand,%20can%20go%20buy%20some%20flowers%20to%20decorate%20my%20cake.%3C/p%3E%3Cp%3EHappy%20Birthday%20to%20my%20amazing%20daughter!!%EF%BB%BF%3C/p%3E){kind=link}
