Happy Call Recipe: Fluffy Minced Pork Omelette

I've whipped up another egg dish - Minced Pork Omelette (肉碎煎蛋), following my last Yummy Shrimp Omelette Recipe (虾仁煎蛋饼) that drew quite a response. This turned out really nice!

Ingredientes

  • 5 Eggs
  • 100g minced Pork
  • 1 sprig Spring Onion (chopped)
  • ½ Chilli (shredded)
  • 1 tsp minced Garlic
  • ½ tsp Thai Fish sauce
  • Pinch of Salt
  • Dash of Pepper
  • ½ tsp Extra-virgin Olive Oil (optional)
  • Marinade for Pork:
  • 1 tsp Oyster sauce
  • ½ tsp Sesame Oil
  • Pinch of Salt
  • Dash of Pepper

Direcciones

  1. Marinate pork for at least 30 mins. Heat & lightly grease pan with oil. Stir-fry pork till half-cook & add garlic.
  2. Meanwhile, whisk eggs. Add chilli, spring onion & seasonings. Mix well.
  3. Pour in eggs & stir lightly. Close lid if using HCP.
  4. HCP user: When you see steam, flip pan over. Open lid to check, ensuring omelette is well in place. Close it back.
  5. Flip pan over after 2 mins. Your fluffy omelette is done. Depending on preference, you may leave it longer to brown.
