Ingredientes

  • 4 c. vegetable oil - (to 6 c.)
  • 1 c. corn flake crumbs
  • 2 tsp crushed red pepper flakes
  • 1 1/4 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp onion pwdr
  • 1 dsh garlic pwdr
  • 1 x egg
  • 1 c. lowfat milk
  • 1 c. flour
  • 1 lb chicken breast fillets
  • 1/4 c. mayonnaise
  • 1 1/2 tsp prepared mustard
  • 2 tsp honey
  • 1 pch paprika
  • 2 Tbsp. Grey Poupon Dijon mustard
  • 1 Tbsp. apricot preserves
  • 2 Tbsp. honey

Direcciones

  1. Make the honey mustard dipping sauce by combining the ingredients in a medium bowl. Cover and chill.
  2. Make the apricot dipping sauce by combing those ingredients in a medium bowl. Cover and chill this sauce as well, till your chicken is ready.
  3. Preheat oil in a deep fryer to 350 degrees.
  4. Prepare the breading by combining the corn flake crumbs, crushed red pepper flakes, cayenne pepper, cumin, salt, paprika, onion pwdr, and garlic in a medium bowl.
  5. Beat the egg in a medium bowl, add in the 1 c. of lowfat milk and stir. Pour the flour into another medium bowl.
  6. Slice each chicken breast lengthwise into strips approximately 1/2-inch wide. When the oil is warm, bread your chicken by first coating each strip with flour. Dip the chicken into the egg/lowfat milk mix and then back into the flour. Dip each chicken strip back in the egg/lowfat milk mix and then in the corn flake crumb mix. Be sure to coat each chicken piece thoroughly with the corn flake crumbs.
  7. Fry 6 to 8 coated chicken strips at a time in the oil for 4 to 5 min or possibly till the chicken is golden. Drain and serve chicken with the dipping sauces on the side.
  8. This recipe yields 6 to 8 servings as an appetizer.
