Hazelnut Praline Buttercream Master Chefs

Ingredientes

  • 1 c. Lowfat milk
  • 4 x Egg yolks
  • 1/3 c. Sugar, plus
  • 1 Tbsp. Sugar
  • 1 c. Butter, unsalted, at room temperature
  • 4 ounce Hazelnut Praline Paste *

Direcciones

  1. Place a medium bowl in a larger bowl of ice water. Set Aside.
  2. Bring lowfat milk to the boiling point in a heavy saucepan over medium heat.
  3. Meanwhile, beat egg yolks in a large mixer bowl till smooth.
  4. Gradually add in 1/3 c. plus 1 Tbsp. of sugar and continue berating till the mix is pale yellow and forms a ribbon when beaters are lifted (about 7 min.)
  5. Gradually add in boiling lowfat milk to yolk mix, beating constantly to avoid the yolk curdling. Return the mix to the saucepan, and cook over low heat - stirring with a wooden spoon, for 30 seconds.
  6. Immediately pour custard into the bowl set over ice water.
  7. Cold, stirring occasionally.
  8. Beat the butter and praline paste in a large bowl till smooth and creamy. Gradually beat in cooled custard.
