%3C/p%3E%3Cp%3EYa...It's%20January.%20Christmas%20is%20done%20and%20over%20with.%20Although%20you%20wouldn't%20know%20it%20by%20looking%20around%20my%20house.%20I%20still%20have%20to%20take%20down%20the%20tree%20and%20repack%20all%20those%20decorations...and%20you%20know%20the%20drill.%20Not%20fun.%20But%20this%20bread%20was%20fun.%20It%20was%20the%20HBin5%20assignment%20for%20December.%20The%20Healthy%20Bread%20in%205%20Minutes%20a%20Day%20bread%20group%20is%20hosted%20by%20Michelle%20over%20at%20Big%20Black%20Dogs%3C/p%3E%3Cp%3EI%20did%20make%20it%20before%20Christmas%20but%20just%20didn't%20get%20around%20to%20posting%20it.%20With%20all%20the%20changes%20I%20made,%20I%20think%20this%20would%20also%20be%20a%20great%20bread%20for%20Easter%20(whenever%20that%20occurs%20this%20year..is%20it%20early?%20late?).%20Anyway...what%20was%20I%20going%20to%20say?%20Man,%20it's%20been%20a%20long%20day.%20O'well...neeeeeeeext....%3C/p%3E%3Cp%3EI%20can%20not%20post%20the%20recipe%20but%20if%20you%20have%20the%20book%20Healthy%20Bread%20in%205%20Minutes%20a%20Day,%20you'll%20find%20the%20original%20recipe%20on%20page%20279.%20I%20will%20tell%20you%20what%20I%20changed.....%3C/p%3E%3Cp%3E-%20As%20is%20my%20custom...I%20halved%20the%20whole%20wheat%20flour%20and%20replaced%20it%20with%20all%20purpose,%20unbleached%20flour.%3C/p%3E%3Cp%3E-%20I%20used%20the%20marzipan%20and%20not%20the%20almond%20paste%20(it%20was%20an%20either%20or%20thing%20in%20the%20recipe).%3C/p%3E%3Cp%3E-%20I%20soaked%20the%20dried%20fruit%20in%20coconut%20rum%20over%20night.%3C/p%3E%3Cp%3E-%20I%20then%20replaced%20some%20of%20the%20water%20in%20the%20recipe%20with%20said%20soaking%20coconut%20rum.%20I%20didn't%20measure%20the%20amount%20of%20rum%20used%20for%20soaking....I%20just%20made%20sure%20the%20fruit%20was%20covered.%20I%20then%20measured%20the%20rum%20after%20soaking%20and%20added%20water%20to%20equal%20the%20required%202%20cups.%3C/p%3E%3Cp%3EOnce%20the%20dough%20was%20ready%20for%20use...I%20rolled%20it%20out%20as%20required%20and%20sprinkled%20in%20the%20marzipan.%3C/p%3E%3Cp%3EYou%20know....if%20you%20make%20a%20full%20batch%20of%20this%20dough,%20it%20makes%20three%201.5%20lb%20loaves.%20The%20recipe%20calls%20for%201/2%20cup%20of%20marzipan%20or%20almond%20paste.%20I%20wonder....are%20you%20suppose%20to%20divide%20that%20into%20thirds?%20or%20use%201/2%20cup%20per%20loaf?%20Cuz%20it%20was%20such%20a%20small%20amount%20that%20one%20could%20hardly%20tell%20it%20was%20there.%3C/p%3E%3Cp%3EAnyway...I%20then%20folded%20the%20dough%20sorta%20like%20an%20%22S%22%20shape%3C/p%3E%3Cp%3EAllowed%20it%20to%20rest%20and%20then%20bake%20until%20golden%20brown%3C/p%3E%3Cp%3EJust%20look%20at%20all%20those%20morsels%20of%20coconut%20rum%20soaked%20tropical%20fruits!%3C/p%3E%3Cp%3EI%20then%20generously%20dusted%20my%20lovely%20loaf%20with%20powdered%20sugar%3C/p%3E%3Cp%3EAnd%20now%20I%20remember%20what%20I%20was%20going%20to%20say%20earlier%20that%20I%20forgot.%20When%20I%20first%20read%20about%20this%20bread,%20all%20I%20could%20think%20about%20was%20the%20ever%20feared,%20dreaded....doorstopper%20tradition%20that%20is%20referred%20to%20as%20Fruit%20Cake.%20I%20wanted%20to%20run%20away,%20screaming!!!%20I%20just%20couldn't%20make%20myself%20bake%20anything%20that%20remotely%20resembled%20Fruit%20Cake!%20That%20is%20why%20I%20made%20the%20changes%20that%20I%20did.%3C/p%3E%3Cp%3EAnd%20it%20was%20a%20huge%20hit!!!%20You%20could%20smell%20the%20coconut%20rum%20as%20the%20bread%20entered%20your%20mouth.%20The%20fruit%20was%20soft%20and%20edible.%20The%20bread%20was%20flavorful%20without%20being%20too%20sweet%20(even%20with%20all%20that%20powdered%20sugar).%20The%20dough%20would've%20made%20great%20muffins%20if%20I%20hadn't%20burnt%20the%20bottoms.%20Although%20I%20did%20save%20the%20tops.%20I%20think%20I'll%20make%20a%20nice%20bread%20pudding%20with%20them.%3C/p%3E%3Cp%3EThe%20next%20loaf%20up%20for%20assignment%20is%20a%20bit%20more%20healthy...Whole%20Wheat%20Flaxseed.%20It%20was%20actually%20%22due%22%20on%20the%20first%20of%20January...but%20you%20know%20me...%3C/p%3E%3Cp%3EFashionably%20late%20as%20always%3C/p%3E%3Cp%3EMy%20goal%20is%20to%20have%20some%20made%20up%20this%20weekend.%3C/p%3E){kind=link}
