Ingredientes

  • 1 Organic (or other) salmon filet
  • 1/2 c vegetable broth
  • sugar free mustard (French's)
  • Mustard seed
  • Seasoned rice vinegar
  • Lemon juice
  • Spinach
  • Lemon Juice
  • garlic chips
  • celery seed

Direcciones

  1. Preheat oven to 400. Use a case iron skillet if possible. Heat broth til bubbling. Coat salmon with mustard and mustard seed. Saute salmon in broth 3 mins/side. Sprinkle a tbsp. of vinegar and a squeeze of lemon juice in. Transfer to oven. Bake 15 - 20 mins, depending on whether you prefer salmon rare or medium etc.
  2. In a frying pan, bring a little water to boil. Add fresh spinach leaves (quite a lot, as it cooks down). Stir quickly, then remove from stove, drain off water, add lemon juice, garlic chips and celery seed.
  3. Serve salmon on top of (or beside) spinach.
