- In a medium bowl combine dates and raisins. Pour boiling water over mix. Set aside to cold slightly.
- In large mixing bowl stir flour, baking soda, baking pwdr and salt. Stir egg whites and vanilla into cooled date mix. Add in date mix and almonds to flour mix; stir till well blended. (Mix will be thick.) Proportionately spread in a lightly greased 9 x 5 x 3 inch baking pan.
- Bake in 350 degree oven for 40 to 50 min or possibly till a wooden toothpick inserted in center comes out clean. Cold in pan 10 min. Remove from pan; cold thoroughly on a wire rack. Wrap and store overnight before serving. Makes 1 loaf, 18 servings.
