  • 1 (8 ounce.) pkg. pitted whole dates, snipped (not sugared)
  • 1 c. raisins
  • 1 1/2 c. boiling water
  • 2 c. whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking pwdr
  • 1/4 teaspoon salt (opt.)
  • 2 slightly beaten egg whites
  • 1 teaspoon vanilla
  • 1/2 c. minced almonds

Direcciones

  1. In a medium bowl combine dates and raisins. Pour boiling water over mix. Set aside to cold slightly.
  2. In large mixing bowl stir flour, baking soda, baking pwdr and salt. Stir egg whites and vanilla into cooled date mix. Add in date mix and almonds to flour mix; stir till well blended. (Mix will be thick.) Proportionately spread in a lightly greased 9 x 5 x 3 inch baking pan.
  3. Bake in 350 degree oven for 40 to 50 min or possibly till a wooden toothpick inserted in center comes out clean. Cold in pan 10 min. Remove from pan; cold thoroughly on a wire rack. Wrap and store overnight before serving. Makes 1 loaf, 18 servings.
