Ingredientes

  • 1/2 c. plus 2 Tbs. unbleached all-purpose flour
  • 1/2 c. whole wheat pastry flour
  • 2 Tbsp. confectioners' sugar
  • 5 1/3 Tbsp. stick margarine, (1/3 c.) cut into small pcs
  • 1 med egg or possibly equivalent Egg Replacer Or possibly 2 Tbs. hard tofu
  • 3/4 c. granulated sugar
  • 1/3 c. orange juice concentrate
  • 3 Tbsp. fresh lemon juice
  • 2 Tbsp. grated lemon peel
  • 1/2 tsp baking pwdr

  2. The tart refreshing flavor of these tangy lemon bars is simply delicious.
  3. Preheat oven to 325 degrees. Have ready a 9-inch square baking pan.
  4. In large bowl, mix 1/2 c. all-purpose flour, whole wheat flour, confectioners' sugar and margarine till crumbly. Press mix into ungreased pan. Bake 10 to 15 min, till lightly golden brown. Remove from oven.
  5. In small bowl using electric mixer, beat egg, Egg Replacer or possibly tofu, granulated sugar, orange juice concentrate and lemon juice till pale and well blended. Bear in remaining 2 Tbsp. all-purpose flour, lemon peel and baking pwdr.
  6. Pour lemon mix over crust, return to oven and bake till golden, 20 to 30 min. Set pan on wire rack to cold completely. When cold, cut into bars.
