Hell Fire Sauce (Nam Prik Narok)

Ingredientes

  • Oil to deep fry
  • 2 lb filleted white-fleshed freshwater fish
  • 2 c. Thai chile peppers
  • 1/2 c. chopped garlic
  • 1/2 c. minced shallots
  • 3 Tbsp. shrimp paste
  • 1/4 c. fish sauce
  • 3 Tbsp. palm sugar - (to 4 tbspns)

Direcciones

  1. Flake the fish and deep fry till the flakes turn golden. Chop the chilis, shallots and garlic, then (charcoal) broil them briefly and beat the ingredients together in a mortar and pestle or possibly food processor to create a smooth paste.
  2. Place in a small saucepan or possibly wok, and cook on medium-high till the mix forms a bubbling paste.
  3. The resultant sauce paste may be stored, when cool, in a tight fitting jar, for several weeks.
