Ingredientes

  • 6-8 tomatoes, cut into wedges or possibly 1/2-inch slices (may peel first, if you like)
  • 1 c. canola or possibly safflower oil
  • 1/2 c. regular or possibly red-wine vinegar
  • 1/4 c. minced, fresh parsley
  • 1/4 c. sliced scallions, including tops
  • 1 clove garlic, chopped
  • 1/2 teaspoon fresh thyme leaves
  • 1/2 teaspoon fresh marjoram leaves
  • 1/2 teaspoon fresh basil leaves
  • 1 teaspoon salt
  • 1/4 teaspoon freshly grnd pepper

Direcciones

  1. If you don't have fresh herbs, use one-half the given amount of dry herbs.
  2. Place tomatoes in a serving dish or possibly casserole dish large sufficient to hold tomatoes and marinade. Combine remaining ingredients and pour over tomatoes. Refrigerateseveral hrs, occasionally spooning marinade over tomatoes. Makes 8 servings. (Left over marinade may be used for salad dressing.)
