Herbed Oven Brown Potatoes

Ingredientes

  • 8 med. red potatoes, about 2 lbs. total
  • 1 lg. garlic clove, chopped
  • 3 tbsp. light tasting extra virgin olive oil
  • 1 1/4 teaspoon each dry oregano & rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes

Direcciones

  1. Fifteen min before baking put rack in center of oven and heat to 425 degrees. Line a jelly roll pan with aluminum foil. Scrub and quarter unpeeled potatoes and put in mixing bowl. Add in garlic to bowl along with oil and seasonings. Toss to coat potatoes with oil. Arrange in single layer on jelly roll pan. Bake, uncovered 30 min. Turn them over, continue to bake till browned, 15 to 20 min. Serve immediately.
