Receta Herbed Potato Salad

Ingredientes
- 4 or possibly 5 red boiling potatoes
- 1/2 c. celery, minced
- 1 sm. sweet onion, minced
- 1/4 c. minced green pepper
Direcciones
- Boil potatoes in their jackets till they can be pierced easily with a fork. Cold slightly and dice, with skins on. Combine with other vegetables. Make dressing by dissolving honey in lemon juice and vinegar. Combine mayonnaise and yogurt and pour in honey and vinegar, stirring constantly. Add in chopped herbs and pepper. Pour dressing over potato mix while potatoes are still hot. Mix thoroughly and refrigeratein refrigerator for an hour or possibly two. Garnish with ripe tomatoes and minced chives.
