%20I%20had%20a%20few%20recipes%20I%20wanted%20to%20experiment%20with.%20%20I%20know%20it's%20not%20the%20time%20to%20have%20a%20%22science%20project%22%20in%20the%20kitchen,%20but%20who%20better%20to%20practice%20on,%20but%20family.%20%20They%20are%20the%20most%20forgiving!%3C/p%3E%3Cp%3ESo%20as%20the%20%22chaos%22%20began%20in%20the%20kitchen,%20many%20family%20members%20(my%20elves)%20stepped%20in%20to%20help%20with%20the%20finishing%20touches.%20%20We%20had%20the%20%22cannoli%20man%22%20%20dipping%20cannolis%20in%20chocolate%20and%20crushed%20pistachios,%20%20my%20son,%20so%20expertly%20mashing%20the%20potatoes,%20and%20my%20mother%20did%20dishes%20as%20we%20went.%20%20She%20said%20she%20loved%20to%20do%20them%20because%20it%20sooths%20her%20tired%20hands.%20%20Okay,%20I%20won't%20argue%20with%20that.%20%20Thanks%20to%20everyone%20we%20pulled%20it%20off.%20%20The%20menu%20consisted%20of%20roasted%20prime%20rib%20(my%20first,%20although%20very%20easy),%20garlic%20green%20beans%20with%20bread%20crumb%20topping,%20slow%20roasted%20red%20onions%20basted%20with%20a%20honey%20butter%20balsamic%20glaze,%20cheesy%20mashed%20potatoes%20and%20sauteed%20mushrooms.%20%20Whew!%20%20For%20dessert%20we%20had%20grandma's%20fudge,%20homemade%20tiramisu%20(in%20a%20future%20post)%20and%20cannolis.%20%20Hope%20you%20enjoyed%20your%20Christmas,%20as%20we%20did!%3C/p%3E%3Cp%3EThe%20%22Cannoli%20Man%22%20putting%20the%20finishing%20touches%20on!%EF%BB%BF%20For%20the%20cannolis%20I%20bought%20the%20shells%20from%20a%20local%20Italian%20restaurant.%20%20Much%20easier%20that%20way.%20%20One%20of%20these%20days%20I'll%20make%20the%20shells...I%20have%20the%20forms,%20already.%20%20The%20filling%20was%20adapted%20from%20Emeril%20Lagasse,%20but%20a%20few%20changes%20were%20made...MUST%20experiment,%20you%20know!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EIn%20a%20medium%20or%20large%20mixing%20bowl,%20whip%20the%20heavy%20cream.%20%20Gently%20fold%20in%20the%20ricotta%20with%20a%20spatula.%20%20Fold%20in%20the%20sugar,%20liqueur,%20chocolate%20chips%20and%20orange%20zest.%20%20Mix%20well.%20%20I%20made%20the%20filling%20the%20day%20before%20so%20the%20flavors%20would%20intensify.%20%20Stuff%20the%20cannolis%20using%20a%20pastry%20bag,%20if%20possible.%20%20Dip%20the%20ends%20in%20melted%20chocolate%20and%20then%20crushed%20pistachios%20and%20serve.%3C/p%3E){kind=link}
