%20the%20first%20thing%20i%20noticed%20when%20i%20made%20this%20sauce%20was%20that%20it%20has%20a%20more%20earthy,%20natural%20flavour%20than%20store-bought%20sauce.%20i%20liked%20it%20%E2%80%93%20so%20much%20so%20that%20i%20am%20thinking%20of%20keeping%20more%20fresh%20tomatoes%20in%20my%20fridge%20than%20cans%20of%20sauce%20as%20back-up.%20but%20don%E2%80%99t%20take%20my%20word%20for%20it%20%E2%80%93%20make%20some%20today%20and%20see%20if%20you%20like%20it%20%20%20you%20may%20fall%20in%20love%20with%20your%20version%20and%20swear%20off%20the%20canned%20version.%20and%20even%20if%20you%20don%E2%80%99t,%20at%20least%20you%20have%20a%20back-up%20option%20if%20you%20were%20to%20run%20out%20of%20sauce%20%E2%80%93%20and%20a%20pasta%20craving%20hits!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EWash%20the%20tomatoes%20and%20then%20blanch%20them%20%E2%80%93%20put%20some%20water%20(enough%20to%20submerge%20the%20tomatoes)%20to%20boil%20and%20once%20%20bubbles%20start%20to%20surface,%20add%20in%20the%20tomatoes%20whole.%20After%20a%20few%20minutes,%20the%20skin%20on%20the%20tomatoes%20will%20start%20to%20split%20and%20peel.%20Turn%20off%20the%20heat,%20remove%20the%20tomatoes%20with%20a%20slotted%20spoon%20and%20cool.%20When%20they%E2%80%99re%20cool%20enough%20to%20handle,%20peel%20off%20the%20skin%20and%20chop%20them%20up%20into%20coarse%20chunks.%20Keep%20aside.%20Cut%20up%20the%20carrots%20into%20chunks%20and%20steam%20in%20the%20microwave%20on%20High%20for%20about%203%20minutes.%20Keep%20aside%20to%20cool.%20Pour%20the%20olive%20oil%20into%20a%20heavy-bottomed%20saucepan%20or%20pot%20and%20place%20on%20a%20low%20flame%20%E2%80%93%20it%20is%20important%20to%20allow%20the%20oil%20to%20heat%20up%20slowly.%20Once%20the%20oil%20has%20started%20to%20heat%20up,%20toss%20in%20the%20onion%20and%20garlic%20chunks%20and%20stir%20to%20coat%20them%20with%20the%20oil.%20Keep%20the%20heat%20on%20low%20throughout.%20Cover%20the%20pot%20with%20with%20a%20lid%20and%20cook%20%20for%20about%205%20%E2%80%93%207%20minutes,%20stirring%20the%20mixture%20in%20intervals.%20Add%20in%20the%20carrots%20(remove%20any%20excess%20water%20before%20adding%20it%20in)%20and%20stir.%20After%20a%20minute%20or%20so,%20add%20in%20the%20tomatoes%20and%20stir.%20Add%20in%20the%20salt,%20pepper%20and%20basil%20(and%20the%20tomato%20puree%20if%20using),%20mix%20it%20all%20well%20and%20put%20the%20lid%20back%20on.%20Cook%20the%20mixture%20in%20the%20closed%20saucepan%20on%20low%20heat%20for%20about%2010%20minutes,%20but%20be%20sure%20to%20keep%20stirring%20it%20in%20regular%20intervals.%20Then%20take%20off%20the%20lid%20and%20cook%20for%20another%205%20minutes%20if%20the%20mixture%20seems%20too%20watery.%20Take%20the%20mixture%20off%20heat%20and%20allow%20it%20to%20cool.%20Once%20it%20has%20completely%20cooled,%20blend%20it%20into%20a%20smooth%20sauce.%20Store%20in%20an%20air-tight%20containter%20in%20the%20fridge.%20Since%20there%20are%20no%20preservatives%20added,%20you%E2%80%99ve%20got%20to%20use%20this%20up%20as%20soon%20as%20possible%20(say%20within%20a%20week).%3C/p%3E%3Cp%3EHere%20is%20how%20i%20prepped%20the%20sauce%20when%20i%20made%20spaghetti:%20Cook%20the%20spaghetti%20and%20keep%20aside%20(*for%20tips%20on%20cooking%20pasta%20perfectly,%20check%20out%20this%20post%20-%20Cooking%20Pasta%20Al%20Dente).%20When%20the%20spaghetti%20is%20ready,%20place%20the%20strands%20in%20a%20circle%20on%20a%20plate.%20Heat%20about%202%20tsp%20of%20olive%20oil%20on%20medium%20heat,%20add%20some%20slivers%20of%20garlic%20and%20slices%20of%20onion%20and%20fry%20them%20until%20the%20garlic%20starts%20to%20get%20brown.%20Tip%20in%20as%20much%20sauce%20as%20needed%20and%20stir%20it%20well.%20You%20can%20add%20some%20water%20to%20thin%20down%20the%20sauce%20if%20it%20is%20too%20thick%20for%20your%20liking.%20If%20you%20want%20to%20add%20any%20veges%20(mushrooms/grilled%20peppers/etc)%20add%20them%20into%20the%20sauce,%20give%20it%20all%20a%20good%20stir%20and%20then%20pour%20over%20the%20spaghetti.%20Enjoy!%3C/p%3E){kind=link}
