Ingredientes

  • 2 1/8 cans sliced apples
  • 2 qts, 1/2 cup juice from fruit and water
  • 1 lb 9 oz granulated sugar
  • 6 1/4 oz cornstarch
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg
  • 2 cups cold water
  • 1 lb, 9 oz flour H&R
  • 1 lb, 1/2 oz all-purpose shortening
  • 1 cup, 1 Tbsp cold water
  • 1 Tbsp, 1 1/4 tsp salt

Direcciones

  1. Drain fruit, reserve juice.
  2. Heat juice and water to boiling point.
  3. Mix sugar, cornstarch, and seasonings.
  4. Add cold water to dry ingredients and stir until smooth. Add to hot juice while stirring briskly with a wire whip. Cook until thickened.
  5. Add cooked drained fruit to thickened juice. Mix carefully to prevent breaking or mashing fruit. Cool.
  6. Pour into baking pans, 9 lb 6 oz per pan.
  7. Mix flour and shortening on low speed, using flat beater.
  8. Mix until fat particles are the size of small peas for a flaky crust.
  9. Add cold water and salt to fat-flour mixture.
  10. Mix on low speed only until dough will hold together.
  11. Roll pastry to fit pans.
  12. Place on top of fruit. Seal edges to sides of pans. Perforate.
  13. Bake at 425 degrees F for 30 minutes, or until top is browned.
  14. Cut 6x8 squares.
  15. Note: wash hands before preparation and as needed to prevent cross contamination. Wash and sanitize work surfaces between each contact with a different raw food item. Inspect all ingredients.
