%20was%20fast%20approaching.%20%20I%20just%20happened%20to%20have%20a%20half%20a%20head%20of%20cabbage%20that%20needed%20to%20be%20used%20up,%20too,%20and%20I%20always%20carrots%20in%20the%20fridge%20and%20cooked%20chicken%20in%20the%20freezer.%20%20No%20worries%20that%20the%20recipe%20from%20which%20I%20decided%20to%20start%20(the%20one%20on%20%20the%20Nasoya%20wrap%20package)%20called%20for%20lean%20ground%20pork.%20%20While%20starting%20with%20raw%20meat%20versus%20cooked%20adds%20yet%20another%20level%20of%20complexity%20to%20any%20dish,%20I%20had%20also%20found%20egg%20roll%20recipes%20that%20called%20for%20cooked%20chicken,%20so%20I%20decided%20to%20create%20my%20own%20recipe%20based%20on%20a%20few%20that%20I%20found%20online.%3C/p%3E%3Cp%3EHere%20are%20the%20links%20to%20the%20two%20recipes%20from%20which%20I%20was%20working:%3C/p%3E%3Cp%3EOkay%20%E2%80%93%20let%20me%20start%20by%20saying%20that%20you%20should%20feel%20free%20to%20look%20at%20other%20recipes%20for%20seasoning%20ideas!%20%20I%20was%20playing%20around%20and%20what%20I%20used%20tasted%20yummy,%20but%20not%20all%20the%20same%20ingredients%20are%20necessary%20for%20excellent%20results.%3C/p%3E%3Cp%3EFor%20example,%20one%20recipe%20called%20for%20oyster%20sauce%20and%20I%20didn%E2%80%99t%20have%20any,%20but%20I%20had%20hoisin%20sauce.%20%20After%20reading%20various%20opinions%20as%20to%20what%20was%20a%20suitable%20substitute%20for%20what,%20I%20figured%20I%20would%20add%20a%20bit%20of%20anchovy%20paste%20to%20add%20some%20depth%20without%20being%20overly%20%E2%80%9Cfishy.%E2%80%9D%20%20(Anchovy%20paste%20has%20a%20way%20more%20subtle%20effect%20than%20you%20would%20think.)%20And,%20I%20had%20no%20bean%20sprouts%20but%20I%20figured%20that%20the%20daikon%20radish%20I%20had%20on%20hand%20would%20add%20an%20extra%20texture,%20albeit%20not%20quite%20that%20of%20the%20sprouts%20but%20in%20step%20with%20an%20oriental%20dish.%20And,%20both%20recipes%20called%20for%20green%20onions,%20another%20ingredient%20I%20lacked.%20%20But,%20I%20have%20some%20chives%20growing%20in%20a%20pot,%20so%20I%20tossed%20some%20of%20them%20in.%3C/p%3E%3Cp%3EYou%20may%20also%20notice%20that%20of%20the%20two%20recipes%20I%20cite%20as%20sources,%20one%20calls%20for%20minced%20ginger%20and%20one%20for%20minced%20garlic.%20%20Well,%20hey,%20why%20not%20both?%20%20Fun%20fact:%20Pearl,%20my%20cat%20of%2018%20years,%20whom%20I%20adopted%20when%20I%20was%20in%20my%20mid%2020s,%20loved%20anything,%20including%20broccoli,%20if%20it%20was%20sauteed%20in%20garlic%20and%20ginger.%20%20That%20cat%20had%20good%20taste.%3C/p%3E%3Cp%3EAnywhoooo%E2%80%A6the%20process%20was%20quick%20and%20easy.%20%20First,%20I%20chopped%20the%20veggies.%3C/p%3E%3Cp%3EThen%20I%20sauteed%20the%20garlic%20and%20ginger:%3C/p%3E%3Cp%3EThen%20I%20added%20the%20veggies%20and%20cooked%20for%20just%20a%20few%20minutes%20until%20a%20bit%20soft%20but%20still%20with%20some%20crunch.%3C/p%3E%3Cp%3ENext,%20I%20added%20the%20chopped%20chicken%20and%20heated%20until%20warmed%20through,%20then%20added%20the%20sauce%20and%20cornstarch%20mix%20%E2%80%93%20everything%20from%20the%20hoisin%20sauce%20on%20in%20the%20ingredient%20list%20that%20I%20had%20mix%20together%20until%20smooth%20before%20adding.%3C/p%3E%3Cp%3EOnce%20the%20sauce%20was%20added%20to%20the%20chicken%20and%20heated%20through,%20I%20moved%20the%20mixture%20from%20the%20pan%20to%20a%20bowl%20so%20it%20could%20cool%20off%20enough%20to%20handle.%20%20Then%20I%20started%20assembling%20the%20egg%20rolls.%20%20I%20used%201/4%20cup%20of%20filling%20for%20each%20wrap.%3C/p%3E%3Cp%3EJust%20so%20you%20know,%20I%20had%20no%20idea%20that%20for%20the%20first%205-6%20egg%20rolls,%20I%20didn%E2%80%99t%20realize%20how%20thin%20the%20wraps%20were%20and%20used%20two%20per%20roll.%20%20Those%20that%20had%20a%20double%20wrap%20were%20fine,%20but%20not%20additionally%20good%20enough%20for%20me%20to%20recommend%20using%20double%20wraps%20all%20the%20time%20unless%20you%20try%20it%20and%20find%20you%20prefer%20a%20thicker%20egg%20roll%20wrap.%3C/p%3E%3Cp%3EThen%20I%20folded%20up%20from%20the%20bottom%20and%20then%20from%20the%20side.%3C/p%3E%3Cp%3ENext,%20I%20used%20just%20a%20bit%20of%20water%20when%20finishing%20and%20securing%20the%20fold,%20put%20them%20on%20a%20very%20lightly%20greased%20cookie%20tray,%20brushed%20just%20a%20bit%20of%20olive%20oil%20on%20the%20tops,%20and%20put%20them%20in%20my%20convection/toaster%20oven%20at%20425%20for%2012%20minutes.%3C/p%3E%3Cp%3EBoth%20recipes%20noted%20above%20said%20between%2010-15%20minutes%20at%20400%20or%20425%20degrees%20in%20a%20regular%20oven,%20so%20I%20would%20pick%20your%20temperature%20and%20keep%20and%20eye%20on%20them.%3C/p%3E%3Cp%3EI%20thought%20these%20tasted%20great%20as%20is,%20but%20I%20did%20make%20a%20dipping%20sauce%20from%20soy%20sauce,%20a%20bit%20of%20rice%20wine%20vinegar,%20some%20sugar%20and%20a%20bit%20or%20minced%20garlic%20and%20onion.%3C/p%3E%3Cp%3ESo,%20the%20verdict%20is%20%E2%80%93%20homemade%20egg%20rolls%20are%20easy%20to%20make%20and,%20while%20there%20are%20plenty%20of%20recipes%20with%20instructions%20for%20frying,%20I%20think%20baking%20works%20just%20as%20well%20and%20even%20better%20for%20crispness,%20especially%20when%20reheating%20(10%20minutes%20at%20350%20works)%20and,%20obviously%20makes%20for%20a%20lower%20fat%20content.%3C/p%3E%3Cp%3ENext%20time%20I%20will%20make%20a%20bunch%20and%20freeze%20to%20bake%20at%20a%20later%20date.%20%20Quick%20easy,%20and%20healthy%20%E2%80%93%20works%20for%20me!%3C/p%3E){kind=link}
