%20loves%20Eggs%20Benedict.%20My%20pet%20peeve%20is%20ordering%20it%20at%20a%20restaurant%20because%20it's%20so%20darned%20expensive!%20Why%20does%20it%20cost%20$5.95%20for%202%20eggs%20with%20toast%20and%20bacon,%20but%20it%20costs%20$11.95%20for%202%20eggs%20with%20an%20English%20muffin%20and%20some%20ham?%20I%20actually%20prefer%20my%20Eggs%20Benedict%20on%20toast%20with%20bacon%20anyway,%20so%20I%20always%20order%20the%20cheap%20meal%20and%20ask%20for%20a%20side%20of%20Hollandaise%20sauce....%20which%20leads%20me%20to%20my%20next%20pet%20peeve%20-%20why%20do%20restaurants%20serve%20such%20awful%20Hollandaise%20sauce??%20It's%20not%20hard%20to%20make%20on%20your%20own,%20it%20tastes%20a%20thousand%20times%20better,%20and%20it%20takes%20the%20same%20(if%20not%20less)%20time%20to%20make%20as%20the%20little%20packets%20you%20whisk%20into%20water.%3C/p%3E%3Cp%3ESet%20up%20a%20double%20boiler%20over%20medium%20heat.%20Whisk%20eggs%20and%20stir%20in%20one%20piece%20of%20butter%20at%20a%20time,%20mixing%20well%20until%20it%20melts%20before%20adding%20the%20next%20piece%20of%20butter.%20Continue%20whisking%20until%20all%20the%20butter%20has%20been%20added.%20(Don't%20let%20the%20eggs%20cook.)%20Add%20lemon%20juice.%20If%20the%20sauce%20separates%20(which%20it%20usually%20does%20for%20me)%20add%20some%20hot%20water%20and%20continue%20whisking.%3C/p%3E%3Cp%3E(This%20was%20our%20vegetarian%20version%20of%20Eggs%20Benedict,%20because%20I%20had%20no%20bacon%20-%20gasp!%20So%20in%20other%20words,%20it%20was%20just%20a%20poached%20egg%20on%20toast%20with%20some%20Hollandaise%20sauce%20on%20top.)%3C/p%3E%3Cp%3EI'd%20like%20to%20know%20how%20they%20came%20up%20with%20the%20idea%20to%20whisk%20egg%20yolks%20over%20a%20double%20boiler,%20stir%20in%20butter,%20and%20add%20some%20lemon%20juice.%20It%20seems%20like%20such%20an%20awful%20idea,%20and%20yet%20it's%20so%20deliciously%20wonderful!%3C/p%3E){kind=link}
