%20%20......%20%20%20%20%20%20%20%20%20%20%20%20%20%20%20%20homemade%20potato%20chips!%20%20%20They%20were%20out%20of%20this%20world.%20Thin,%20crispy,%20deliciously%20salted,%20browned%20to%20perfection!%20%20I%20almost%20ate%20so%20many%20of%20them%20I%20didn't%20want%20a%20steak.%3C/p%3E%3Cp%3EWhen%20I%20asked%20how%20they%20made%20them,%20they%20told%20me.%20White%20russet%20potatoes,%20deep%20fried,%20and%20salted.%20Whut???%20%20And%20they%20taste%20this%20good?%20%20And%20I've%20never%20made%20them?%20%20Are%20you%20KIDDING%20me?%20They%20make%20Lay's%20potato%20chips%20taste%20like%20a%20piece%20of%20cardboard.%3C/p%3E%3Cp%3ESo%20I%20made%20them,%20and%20like%20I%20said,%20knocked%20them%20out%20of%20the%20park.%20%20Do%20try%20these.%20A%20bit%20of%20a%20pain%20with%20the%20hot%20oil%20and%20all,%20but%20so%20simple.%20%20I%20used%20sea%20salt%20on%20mine%20which%20was%20divine,%20but%20I'm%20thinking%20next%20time%20using%20some%20flavored%20sea%20salt.%20Like%20smoked%20sea%20salt?%20%20Chipotle%20sea%20salt?%20%20Imagine%20the%20possibilities.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E2%20large%20rusted%20potatoes,%20washed,%20not%20peeled.%3C/p%3E%3Cp%3EUsing%20a%20Mandolin%20or%20a%20slicer%20of%20some%20type%20(a%20necessity%20because%20you%20want%20the%20slices%20thin)%20cut%20off%20the%20tips%20of%20the%20potatoes%20and%20slice%20the%20remainder%20into%20thin%20strips.%20(I%20used%20the%20next%20to%20lowest%20setting%20on%20mine)%20Place%20them%20in%20a%20large%20bowl%20and%20cover%20with%20cold%20water%20for%20one%20hour.%20(Takes%20the%20gumminess%20and%20some%20starch%20out%20of%20the%20potatoes)%3C/p%3E%3Cp%3EAfter%20an%20hour,%20remove%20chips%20from%20water,%20paper%20towel%20them%20dry,%20and%20lay%20on%20paper%20towels%20for%2015%20minutes%20to%20let%20them%20dry%20further.%20In%20the%20water%20and%20while%20drying%20they%20will%20curl%20by%20themselves%20forming%20that%20perfect%20potato%20chip%20look.%3C/p%3E%3Cp%3EHeat%20oil%20to%20370%20to%20380%20degrees.%3C/p%3E%3Cp%3EDrop%207%20-%2010%20slices%20into%20the%20oil%20at%20a%20time.%20They'll%20separate%20just%20fine.%20Cook%20for%202%20minutes%20per%20side,%20turning%20once.%20Cook%20them%20a%20minute%20or%20two%20longer%20if%20you%20like%20really%20dark%20chips.%20(My%20favorite%20is%20the%20darker%20ones....)%3C/p%3E%3Cp%3EDrain%20on%20paper%20towels%20and%20salt%20one%20side.%20I%20find%20less%20salt%20is%20better%20but%20it's%20your%20personal%20taste.%3C/p%3E%3Cp%3ELet%20the%20oil%20heat%20again%20to%20the%20proper%20temperature%20in%20between%20batches%20of%20chips.%20Repeat%20until%20all%20potatoes%20are%20cooked.%20Now%20tell%20me,%20you%20didn't%20try%20one%20from%20the%20first%20batch%20you%20made.....%20I%20bet%20you%20did.%3C/p%3E%3Cp%3EStore%20in%20baggies%20for%20up%20to%203%20days.%20Enjoy,%20these%20are%20killer,%20and%20they%20won't%20last%203%20days,%20I%20bet%20ya.%20ha%20ha%3C/p%3E){kind=link}
