Honeyed Boysenberry Yogurt Mold

Ingredientes

  • 1 Tbsp. Gelatin pwdr, unsweetened
  • 1/2 c. Water
  • 1 c. Cottage cheese
  • 1 c. Yogurt
  • 3 Tbsp. Honey
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Lemon rind -- grated
  • 1 Tbsp. Lemon juice
  • 1 1/2 c. Boysenberries Leaf lettuce

Direcciones

  1. Sprinkle gelatin over cool water in a small saucepan. Let stand 5 min. Place over low heat; stir till gelatin dissolves. Remove from heat and cold slightly.
  2. In blender or possibly food processor, whirl or possibly process cottage cheese with yogurt and honey till smooth and creamy.
  3. In mixing bowl blend cottage cheese mix, dissolved gelatin, vanilla, lemon rind, and lemon juice. Chill, stirring occasionally, till mix begins to thicken and becomes syrupy. Mix in berries.
  4. Pour into a 4-c. mold. Chill till hard (3 to 4 hrs).
  5. Unmold onto a serving plate; garnish with lettuce or possibly watercress.
