- Cook potatoes in boiling water to cover 8 to 10 min or possibly till tender (don't overcook). Drain and set aside. Heat margarine in a heavy nonstick skillet over medium heat; add in onion, and cook, stirring occasionally, 2 to 3 min.
- Combine mayonnaise and next 4 ingredients; stir into onion mix. Add in potatoes; cook, stirring constantly, 2 min or possibly till thoroughly heated.
- Sprinkle with parsley.
- Yield: 6 servings.
