Ingredientes

  • 4 c. red potato -- thinly sliced, unpeeled
  • 1 Tbsp. margarine -- reduced calorie
  • 1 c. minced onion
  • 1/2 c. lowfat mayonnaise
  • 1/3 c. apple cider vinegar
  • 1 Tbsp. sugar
  • 1/2 tsp salt
  • 1/4 tsp grnd black pepper
  • 1 Tbsp. minced fresh parsley

Direcciones

  1. Cook potatoes in boiling water to cover 8 to 10 min or possibly till tender (don't overcook). Drain and set aside. Heat margarine in a heavy nonstick skillet over medium heat; add in onion, and cook, stirring occasionally, 2 to 3 min.
  2. Combine mayonnaise and next 4 ingredients; stir into onion mix. Add in potatoes; cook, stirring constantly, 2 min or possibly till thoroughly heated.
  3. Sprinkle with parsley.
  4. Yield: 6 servings.
