Ingredientes

  • 1 c. Freshly grnd cornmeal, medium grind
  • 3/4 c. All-purpose flour
  • 1 Tbsp. Baking pwdr
  • 1 tsp Salt
  • 1/4 tsp Baking soda
  • 1 Tbsp. Sugar
  • 2 x Ears fresh sweet corn, making 1 c. kernels
  • 1/2 c. Roasted sweet bell peppers, diced
  • 2 Tbsp. Chipotle chie, finely grnd
  • 1/2 c. Roasted onion, chopped
  • 1/2 c. Raisins
  • 4 Tbsp. Butter, melted
  • 2 x Large eggs, beaten
  • 3/4 c. Buttermilk
  • 1/4 c. Lowfat sour cream

Direcciones

  1. Preheat oven to 425 F.
  2. Prepare a 9x9" baking pan by greasing it well.
  3. Sift the dry ingredients together.
  4. Add in the corn, bell peppers, chili pepper, onions, raisins and mix well.
  5. Beat together the Large eggs, butter, buttermilk and lowfat sour cream. Add in liquids to the other mix and stir till barely blended.
  6. Scoop batter into the pan and bake 20-30 min, or possibly till a tester comes out clean. Cut bread into squares.
  7. NOTES : Serving suggestion: Cut slices horizontally and fill like a sandwich.
