Receta Hot And Smoky Peppered Corn Bread

Ingredientes
- 1 c. Freshly grnd cornmeal, medium grind
- 3/4 c. All-purpose flour
- 1 Tbsp. Baking pwdr
- 1 tsp Salt
- 1/4 tsp Baking soda
- 1 Tbsp. Sugar
- 2 x Ears fresh sweet corn, making 1 c. kernels
- 1/2 c. Roasted sweet bell peppers, diced
- 2 Tbsp. Chipotle chie, finely grnd
- 1/2 c. Roasted onion, chopped
- 1/2 c. Raisins
- 4 Tbsp. Butter, melted
- 2 x Large eggs, beaten
- 3/4 c. Buttermilk
- 1/4 c. Lowfat sour cream
Direcciones
- Preheat oven to 425 F.
- Prepare a 9x9" baking pan by greasing it well.
- Sift the dry ingredients together.
- Add in the corn, bell peppers, chili pepper, onions, raisins and mix well.
- Beat together the Large eggs, butter, buttermilk and lowfat sour cream. Add in liquids to the other mix and stir till barely blended.
- Scoop batter into the pan and bake 20-30 min, or possibly till a tester comes out clean. Cut bread into squares.
- NOTES : Serving suggestion: Cut slices horizontally and fill like a sandwich.
