Ingredientes

  • 1 1/4 lb Sweet red peppers cored Seeded cut into 1/4 inch Dice (3 c.)
  • 12 ounce Dry apricots cut into 1/4
  • 1 x Inch dice
  • 1 c. Raisins
  • 1 lrg Onion fine minced
  • 50 x milliliter Garlic thinly slivered
  • 1 x piece fresh -- (3 inch) Gingerroot peeled and thin Slivered (3 c.)
  • 1 1/2 tsp Salt
  • 1 tsp Cumin seeds
  • 1 1/2 tsp Crushed red pepper flakes
  • 3/4 tsp Mustard seeds
  • 1 c. Sugar
  • 3/4 c. Red wine vinegar

Direcciones

  1. Combine sweet red peppers, apricots, raisins, onion, garlic, gingerroot, salt, red pepper flakes, cumin seeds, mustard seeds and sugar in large saucepan. Cook, uncovered, stirring occasionally, over medium heat till sugar dissolves, about 5 min. Add in vinegar. Cook stirring often, till mix is shiny and thick 30- 35 min. Cold. Cover and chill.
