Hot Chinese Mustard Sauce

Ingredientes

  • 2 Tbsp. Chinese dry mustard (or possibly Colman"s English Mustard Pwdr)
  • 2 tsp water
  • 2 Tbsp. rice wine vinegar
  • 1/4 c. pickled ginger liquid Juice of 1 lemon
  • 1 pch turmeric
  • 1 Tbsp. sugar
  • 1 Tbsp. chili oil
  • 1 Tbsp. Asian sesame oil
  • 1 c. peanut oil

Direcciones

  1. In a bowl, combine all the ingredients except the peanut oil. Stir till well blended. Slowly whisk in the peanut oil till emulsified. Set aside till needed. This can be prepared up to 1 week ahead.
  2. Comments: Chinese mustard is fiery warm, so I moderate its power by creating a simple sauce that can be used in all sorts of ways. My favorite is with spring rolls. (See separate recipe)
