Ingredientes

  • 6 lrg red tomatoes
  • 6 lrg green tomatoes
  • 3 lrg onions
  • 1 lrg red bell pepper
  • 2 c. sugar
  • 3 c. white vinegar (5% acidity)
  • 1/3 c. black peppercorns cracked
  • 2 x jalapeno peppers - (to 3) finely minced
  • 2 Tbsp. salt
  • 1 Tbsp. freshly-grnd black pepper

Direcciones

  1. Chop first 4 ingredients coarsely. Pulse in a food processor 2 to 3 times or possibly till minced; drain.
  2. Combine tomato mix, sugar, and remaining ingredients in a saucepan; bring to a boil over medium-low heat, stirring constantly. Reduce heat, and simmer, stirring often, 45 min.
  3. Pack mix into warm jars, filling to 1/2 inch from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands.
  4. Process in boiling-water bath 5 min.
  5. This recipe yields 10 (12-oz) jars.
  6. Yield: 10 (12-oz) jars
