%20beef%20in%20a%20very%20long%20time%20and%20so%20I%20splurged%20and%20treated%20us%20to%20a%20Prime%20Rib.%20%20Oh%20boy%20it%20was%20really%20good.%20%20%20Prime%20Rib%20is%20my%20favourite%20of%20all%20the%20roasts.%20%20I%20used%20to%20cook%20it%20for%20my%20employers%20fairly%20often%20when%20I%20worked%20at%20the%20Manor,%20but%20I%20think%20Todd%20and%20I%20have%20only%20ever%20had%20it%20one%20other%20time%20the%20whole%20time%20we%20have%20been%20married.%3C/p%3E%3Cp%3EWhen%20I%20considered%20the%20cost%20of%20going%20out%20for%20a%20meal%20and%20just%20buying%20in%20a%20nice%20roast.%20%20Buying%20in%20a%20nice%20roast%20won!%20%20We%20had%20a%20much%20nicer%20meal%20than%20we%20would%20have%20been%20able%20to%20buy%20had%20we%20gone%20out%20and%20we%20have%20the%20delicious%20leftovers%20to%20enjoy.%3C/p%3E%3Cp%3EToday%20I%20made%20hot%20%20Roast%20Beef%20and%20Cheese%20Sandwiches,%20using%20what%20I%20had%20on%20hand%20in%20the%20fridge%20and%20larder,%20%20and%20some%20of%20the%20leftover%20roast.%20%20%20THEY.%20WERE.%20FABULOUS!!%3C/p%3E%3Cp%3EI%20sliced%20some%20of%20the%20roast%20up%20very%20thinly%20and%20then%20gently%20warmed%20it%20up%20in%20a%20mix%20of%20beef%20stock%20and%20steak%20sauce.%20%20While%20I%20was%20heating%20the%20meat,%20I%20fried%20some%20onions%20until%20they%20were%20just%20golden%20brown.%3C/p%3E%3Cp%3EI%20split,%20buttered%20and%20toasted%20some%20hoagie/finger%20rolls.%20%20I%20spread%20the%20bottom%20half%20with%20some%20blue%20cheese%20dressing,%20and%20then%20topped%20them%20with%20some%20of%20the%20warmed%20meat,%20which%20had%20absorbed%20most%20of%20the%20stock%20and%20flavours%20of%20the%20steak%20sauce.%3C/p%3E%3Cp%3EI%20topped%20the%20meat%20with%20some%20of%20those%20golden%20brown%20onions%20and%20then%20added%20a%20layer%20of%20cheese%20.%20.%20.%20%20four%20kinds%20to%20be%20exact,%20as%20that%20is%20what%20I%20had%20in%20the%20fridge%20.%20.%20.%20%20strong%20cheddar,%20mozzarella,%20Parmesan%20and%20Comte%20.%20.%20.%20and%20then%20I%20banged%20them%20back%20into%20the%20oven%20to%20melt%20the%20cheese.%3C/p%3E%3Cp%3EThe%20end%20result%20was%20so%20utterly%20gorgeous%20none%20of%20us%20said%20a%20word%20the%20whole%20time%20we%20were%20eating%20them%20.%20.%20.%20%20all%20you%20could%20hear%20was%20.%20.%20.%20%20mmm%20.%20.%20.%3C/p%3E%3Cp%3ETry%20them.%20%20I%20think%20you%20will%20like%20them%20too!%20%20The%20blue%20cheese%20dressing%20added%20an%20extra%20special%20touch%20and%20the%20combination%20of%20cheeses%20was%20just%20perfect.%20%20Altogether%20they%20were%20totally%20sublime.%3C/p%3E%3Cp%3E*Hot%20Roast%20Beef%20and%20Cheese%20Sandwiches*%3C/p%3E%3Cp%3EMakes%204%20to%206%3C/p%3E%3Cp%3EDELICIOUS!%20%20Seriously.%20%20There%20is%20no%20other%20word%20for%20it.%20%20You%20will%20never%20look%20at%20leftover%20roast%20beef%20in%20quite%20the%20same%20way%20again.%3C/p%3E%3Cp%3Egolden%20brown,%20taking%20care%20not%20to%20allow%20them%20to%20burn.%3C/p%3E%3Cp%3EPreheat%3C/p%3E%3Cp%3Ethe%20oven%20to%20190*C/375*F/%20gas%20mark%205.%20%20Split%20the%20rolls%20almost%20all%20the%3C/p%3E%3Cp%3Eway%20through%20and%20put%20them%20on%20a%20baking%20tray.%20%20Lightly%20butter%20each%20one%20with%3C/p%3E%3Cp%3Esome%20softened%20butter.%20%20Roast%20in%20the%20oven%20until%20golden%20brown.%20%20Remove%3C/p%3E%3Cp%3Efrom%20the%20oven.%20Increase%20the%20oven%20temperature%20to%20200*C/40)*F/%20gas%20mark%206.%3C/p%3E%3Cp%3ESpread%20one%20half%20of%20each%20with%20some%20blue%20cheese%20dressing.%20%20Using%20tongs%3C/p%3E%3Cp%3Eremove%20an%20equal%20portion%20of%20beef%20and%20place%20it%20onto%20half%20of%20each%20roll.%20Top%3C/p%3E%3Cp%3Ewith%20an%20equal%20portion%20of%20fried%20onions.%20%20Mix%20all%20the%20cheese%20together%20and%3C/p%3E%3Cp%3Edivide%20this%20amongst%20each%20roll,%20scattering%20it%20over%20the%20onions.%20%20Return%3C/p%3E%3Cp%3Eto%20the%20oven%20and%20bake%20for%20an%20additional%205%20to%208%20minutes%20until%20the%20cheese%3C/p%3E%3Cp%3Ehas%20melted.%20%20%20Serve%20hot.%3C/p%3E){kind=link}
