Hot Spicy Cold Noodles

Ingredientes

  • 500 gm fresh Chinese noodles
  • 4 x scallions (or possibly green onions), minced
  • 10 ml chili oil
  • 10 ml sesame seed oil
  • 30 ml vinegar
  • 30 ml sugar
  • 7 1/2 ml salt
  • 2 1/2 ml black pepper, (fresh grnd)
  • 5 ml MSG, (optional)
  • 2 x fresh red peppers minced.

Direcciones

  1. Cook the noodles in boiling water for 3 min, then drain. Rinse them in cool water till they are cold, then set aside to drain.
  2. Make the sauce by mixing together all of the other ingredients.
  3. Heat 50 ml oil in a wok. When it is warm, pour in the sauce mix, and then the noodles. Stir well to cover the noodles with sauce, then remove and cold.
  4. This recipe is an easy prepare-ahead dish for a warm summer day. It makes a good barbecue side dish for all of us who are tired of potato salads.
  5. You can serve this dish hot if you want, but it is better when cool.
  6. It is a good dish to prepare the previous day and leave in the refrigerator overnight.
