Ingredientes

  • 1 lb grnd beef
  • 1 x onion minced
  • 1 x bell pepper minced
  • 2 x garlic cloves minced
  • 1 Tbsp. chili pwdr
  • 2 tsp grnd cumin
  • 1/2 tsp cayenne pepper
  • 1 pch grnd cinnamon
  • 3 c. canned chicken broth
  • 1 can tomatoes minced, with juices (14-to-16-oz)
  • 12 x purchased tamales 3 ounces each
  • 1 can pinto beans rinsed, liquid removed (15-oz)
  • 1 c. frzn corn kernels Shredded cheddar

Direcciones

  1. Heat heavy large saucepan over medium-high heat. Add in first 4 ingredients and cook till beef is brown, breaking up meat with fork, about 4 min.
  2. Add in chili pwdr, cumin, cayenne and cinnamon and cook 1 minute. Add in broth and tomatoes with juices. Cover and simmer 30 min. Meanwhile, heat tamales according to package instructions.
  3. Stir beans and corn into soup. Simmer till corn is just heated through, about 3 min. Season soup to taste with salt and pepper. Place 2 tamales into each of 6 bowls. Ladle soup into bowls. Sprinkle with cheese and serve.
  4. Serves 6.
