%20with%20a%20bit%20of%20milk,%20for%20lunch-%20toss%20it%20with%20some%20fresh%20veggies%20in%20a%20salad%20or%20sit%20down%20to%20a%20plate%20of%20savoury%20buckwheat%20with%20caramelised%20onions%20and%20saut%C3%A9ed%20mushrooms%20for%20dinner.%20Reheat%20the%20leftovers%20in%20the%20morning,%20top%20it%20up%20with%20an%20egg%20and%20voila%20a%20new%20breakfast%20dish%20is%20born!%20The%20only%20two%20things%20you%20need%20to%20know%20are%20what%20type%20of%20buckwheat%20is%20suitable%20for%20these%20recipes%20and%20how%20to%20cook%20it.%3C/p%3E%3Cp%3EWhen%20I%20first%20moved%20to%20North%20America%2015%20years%20ago%20the%20only%20place%20I%20could%20find%20buckwheat%20was%20a%20health%20food%20store%20but%20although%20I%20could%20recognise%20the%20familiar%20triangular%20shape%20of%20the%20groats,%20the%20colour%20was%20anaemic%20grey%20instead%20of%20rich%20brown%20I%20was%20used%20to.%20I%20learned%20that%20buckwheat%20sold%20in%20Russia%20is%20pre-roasted,%20and%20it%20is%20this%20process%20that%20prevents%20the%20groats%20from%20turning%20into%20a%20mushy%20mess%20during%20cooking%20as%20well%20as%20provides%20that%20lusciously%20nutty%20flavour%20I%E2%80%99ve%20come%20to%20expect.%20It%20seems%20that%20many%20stores%20have%20the%20pre-roasted%20variety%20of%20buckwheat%20groats,%20however,%20the%20best%20buckwheat%20comes%20from%20Russian%20stores%20so%20if%20you%20have%20one%20nearby%20check%20it%20out.%20It%E2%80%99s%20worth%20it!%3C/p%3E%3Cp%3EWhat%20I%20would%20like%20to%20share%20with%20you%20is%20the%20basic%20method%20of%20cooking%20buckwheat%20and%20one%20simple%20recipe%20which%20happens%20to%20be%20my%20family%E2%80%99s%20favourite%20way%20of%20eating%20it.%20Have%20I%20mentioned%20that%20my%20kids%20are%20crazy%20about%20buckwheat?%3C/p%3E%3Cp%3EBuckwheat%20with%20Caramelised%20Onions%20and%20Cremini%20Mushrooms%20%7BBreakfast%20Edition%7D%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EButter-%202%20tbsp.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ERinse%20your%20buckwheat%20and%20dry%20fry%20it%20in%20a%20non-stick%20frying%20pan%20(i.e.%20in%20a%20dry%20pan,%20without%20oil)%20over%20medium%20heat%20for%20a%202-3%20minutes.%20Transfer%20the%20buckwheat%20to%20a%20pot,%20add%20water%20and%20salt%20and%20cook%20for%2015%20minutes%20until%20the%20groats%20are%20soft%20and%20the%20water%20is%20evaporated.%20Take%20it%20off%20the%20heat,%20cover%20the%20pot%20with%20a%20lid%20and%20let%20it%20stand%20for%20additional%2010-15%20minutes.%20Alternatively,%20you%20can%20cook%20buckwheat%20in%20your%20rice%20cooker,%20just%20follow%20the%20instructions%20for%20grain%20to%20water%20ratio%20for%20your%20particular%20rice%20cooker.%3C/p%3E%3Cp%3EWhile%20waiting%20for%20your%20buckwheat%20dice%20your%20onions%20and%20mushrooms.%20Feel%20free%20to%20slice%20them%20if%20you%20prefer%20a%20chunkier%20look.%20I%20am%20still%20in%20the%20stage%20%20of%20%E2%80%9Chiding%E2%80%9D%20the%20healthy%20things%20from%20my%20kids%20so%20I%20usually%20dice.%3C/p%3E%3Cp%3EPut%20a%20large%20frying%20pan%20on%20high-medium%20heat%20and%20when%20it%E2%80%99s%20hot%20add%20butter,%20onions%20and%20a%20pinch%20of%20salt.%20Salt%20will%20draw%20moisture%20out%20of%20the%20onions%20which%20will%20help%20with%20caramelising%20process.%20Fry%20them%20slowly,%20stirring%20once%20in%20a%20while%20and%20not%20letting%20them%20burn.%20Once%20your%20onions%20look%20wilted%20and%20darker%20in%20colour,%20add%20mushrooms%20and%20saut%C3%A9%20them%20for%205%20minutes%20adding%20salt%20and%20pepper%20to%20taste.%20Now%20add%20your%20buckwheat%20and%20mix%20everything%20together,%20cook%20for%202%20more%20minutes%20to%20bring%20all%20the%20ingredients%20to%20the%20same%20temperature%20and%20allow%20for%20the%20flavours%20to%20blend,%20taste%20to%20make%20sure%20it%20has%20enough%20seasoning.%20This%20meal%20could%20be%20enjoyed%20as%20a%20main%20course%20or%20as%20a%20side%20dish%20to%20any%20type%20of%20meat%20or%20fish.%20%20What%20you%20see%20here%20is%20leftovers%20that%20were%20served%20a%20couple%20of%20days%20later%20for%20breakfast.%20Fry%20your%20eggs%20in%20a%20frying%20pan%20and%20top%20each%20portion%20with%20an%20egg.%20By%20all%20accounts-Breakfast%20of%20Champions.%3C/p%3E%3Cp%3ENote:%20I%20use%20water%20to%20cook%20buckwheat%20when%20I%20want%20it%20to%20be%20versatile-sweet%20or%20savoury.%20If%20you%20are%20preparing%20buckwheat%20for%20dinner%20in%20a%20savoury%20dish%20I%20would%20suggest%20using%20broth%20instead%20of%20water-%20a%20quick%20and%20simple%20way%20to%20infuse%20your%20dish%20with%20much%20flavour.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
