,%20with%20whom%20I%20had%20an%20ongoing%20conversation%20about%20chicken.%20We%20wanted%20the%20ultimate%20crispy%20skin,%20tender%20meat,%20not%20dry,%20not%20under%20cooked.%20She%20was%20all%20about%20pan%20searing%20the%20bird%20before%20sticking%20it%20in%20the%20oven%20-%20which%20for%20me%20(as%20anyone%20who%20has%20read%20this%20blog%20on%20a%20regular%20basis%20knows)%20is%20just%20WAY%20TOO%20MUCH%20WORK.%20Plus,%20an%20extra%20pan%20to%20wash.%20I%20don't%20think%20so.%20At%20the%20time%20I%20was%20in%20love%20with%20Barbara%20Kafka's%20book%20Roasting%20-%20which%20is%20all%20about%20cooking%20things%20at%20500%20degrees.%20Which%20we%20tried.%20Great%20crispy%20skin,%20although%20the%20meat%20was%20a%20little%20drier%20than%20I%20would%20have%20liked.%20However,%20I%20also%20had%20(and%20still%20have)%20a%20crappy%20kitchen%20fan%20which%20was%20louder%20than%20the%20tarmac%20at%20La%20Guardia%20the%20Wednesday%20before%20Thanksgiving.%20So,%20even%20though%20the%20500%20degree%20method%20was%20easier%20than%20pre-pan-searing,%20it%20was%20either%20a%20whole%20house%20stinking%20of%20roast%20chicken%20for%20three%20days,%20or%20requiring%20everyone%20in%20it%20to%20pop%20in%20a%20pair%20of%20Hearos.%20It%20also%20required%20me%20to%20clean%20the%20oven%20after%20roasting.%20Yeah,%20like%20that%20is%20going%20to%20happen.%20Others%20told%20us%20stories%20(perhaps%20apocryphal)%20of%20people%20roasting%20their%20birds%20upright%20on%20beer%20cans,%20or%20on%20specially%20made%20devices%20that%20look%20like%20beer%20cans,%20but%20we%20never%20got%20around%20to%20trying%20that%20before%20she%20moved%20away,%20far%20far%20away,%20and%20I%20went%20back%20to%20baking%20chickens%20in%20a%20350%20oven%20because%20tender%20meat%20was%20more%20important%20to%20my%20family%20than%20crispy%20skin.%20It%E2%80%99s%20a%20terrible%20story:%20one%20that%20has%20been%20haunting%20me%20chicken%20after%20chicken...%20so%20many%20chickens...%20At%20one%20point,%20I%20did%20improve%20upon%20my%20baked%20chicken%20when%20I%20stole%20got%20the%20bright%20idea%20of%20cutting%20the%20back%20out%20of%20the%20chicken%20before%20cooking%20it,%20which%20greatly%20reduces%20the%20amount%20of%20time%20it%20takes%20a%20bird%20to%20roast.%20Which%20I%20have%20been%20doing%20for%20years%20and%20which%20everyone%20likes.%20%20Until,%20suddenly,%20last%20Sunday,%20I%20thought,%20OMG%20why%20not%20roast,%20at%20a%20very%20high%20heat,%20for%20a%20very%20short%20time,%20then%20bake%20the%20damn%20thing%20until%20it%20is%20perfect!%20It%20was%20like%20a%20light%20shone%20down%20from%20heaven%20and%20illuminated%20the%20pale%20little%20plucked%20chicken%20before%20me.%20Angels%20sang%20(although%20I%20did%20have%20my%20friend%20John%20Treacy%20Egan%E2%80%99s%20Christmas%20cd%20playing%20on%20the%20ipod%20so%20perhaps%20I%20was%20confused...)%20%20I%20roasted%20that%20chicken%20at%20500%20for%2015%20minutes,%20then%20dropped%20the%20whole%20thing%20down%20to%20350%20for%20about%2040%20--%20And%20it%20was:%20Perfect.%20Crispy,%20juicy,%20and%20it%E2%80%99s%20only%20taken%20me%20five%20years%20to%20come%20to%20this.%20Five%20years,%20when%20you%20all%20probably%20figured%20out%20what%20I%20was%20heading%20towards%20in%20my%20first%20few%20paragraphs.%20When%20many%20of%20you%20have,%20most%20likely,%20been%20roasting%20your%20chickens%20in%20this%20very%20manner%20for%20ever.%20It%E2%80%99s%20just%20so%20obvious,%20yet%20for%20me,%20so%20very%20elusive.%20I%20have%20no%20excuse.%20I%E2%80%99d%20post%20pictures,%20except%20I%20don%E2%80%99t%20have%20any%20because%20we%20all%20ate%20the%20chicken%20so%20fast%20I%E2%80%99ve%20got%20nothing%20but%20carcass.%20Plus,%20if%20I%20waited%20to%20roast%20another%20chicken%20(which%20I%20might%20do%20tomorrow,%20but%20still...)%20I%E2%80%99d%20probably%20never%20post%20this%20chickeny%20story,%20and%20those%20of%20you%20whom%20I%20see%20on%20a%20regular%20basis%20would%20still%20be%20asking%20me%20when%20I%E2%80%99m%20ever%20going%20to%20post%20again.%3C/p%3E%3Cp%3EHere's%20my%20method:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20500.%3C/p%3E%3Cp%3EWash%20your%20bird,%20dry%20it%20thoroughly,%20then%20flip%20it%20over%20and%20cut%20out%20the%20back%20using%20sharp%20sheers%20or%20a%20boning%20knife.%20Flip%20it%20back%20over%20and%20press%20down%20on%20it%20to%20flatten%20it%20some.%20Rub%20oil,%20salt%20and%20pepper%20over%20the%20whole%20thing,%20front%20and%20back.%20Then,%20in%20a%20low%20sided%20roasting%20pan,%20create%20a%20little%20rack%20with%20the%20celery%20and%20the%20carrots%20-%20lining%20them%20up%20next%20to%20each%20other%20and%20putting%20the%20chicken,%20breast%20side%20up,%20on%20top.%20Tuck%20the%20onion%20halves%20under%20the%20bird.%3C/p%3E%3Cp%3EStick%20it%20in%20the%20oven,%20put%20the%20timer%20on%20for%2015%20minutes%20(20%20if%20it%20was%20a%20pretty%20big%20bird)%20-%20turn%20the%20fan%20on%20and%20endure%20the%20noise%20-%20or%20your%20children%20will%20complain%20the%20house%20stinks%20every%20time%20you%20walk%20into%20it%20for%20the%20next%20week.%3C/p%3E%3Cp%3EWhen%20the%20timer%20goes%20off,%20turn%20the%20oven%20down%20to%20350.%20Pull%20the%20bird%20out%20and%20-%20if%20you%20have%20it%20-%20pour%20the%20chicken%20broth%20over%20it.%20Stick%20the%20bird%20back%20in%20the%20oven%20and%20roast%20for%2020%20min.%20Pull%20it%20out%20and%20bast%20with%20pan%20juices%20(you%20don't%20have%20to%20do%20any%20of%20this,%20I%20just%20like%20to%20do%20it%20and%20think%20it%20improves%20the%20flavor%20of%20the%20skin%20-%20but%20everything%20will%20be%20fine%20if%20you%20don't).%20Put%20the%20bird%20back%20in%20for%20another%2020%20minutes.%20Take%20it%20out%20and%20check%20it%20-%20you%20can%20either%20slice%20it%20at%20the%20thigh%20and%20look%20to%20see%20if%20the%20juices%20are%20running%20clear,%20or%20you%20can%20stick%20a%20meat%20thermometer%20in%20the%20fat%20part%20of%20the%20thigh%20and%20be%20sure%20it%20hits%20between%20160%20and%20165%20degrees.%3C/p%3E%3Cp%3EWhen%20it's%20done,%20take%20the%20bird%20out%20and%20resist%20the%20urge%20to%20dig%20right%20in%20--%20tent%20it%20with%20foil%20(so%20you%20don't%20steam%20out%20any%20of%20the%20crispiness%20of%20the%20skin)%20and%20let%20it%20sit%20as%20long%20as%20you%20can%20--%20between%207%20and%2010%20minutes%20is%20about%20all%20I%20can%20stand.%20I%20usually%20spend%20this%20time%20making%20a%20salad%20or%20some%20sort%20of%20vegetable.%3C/p%3E%3Cp%3EThis%20bird%20is%20a%20beautiful%20thing%20-%20I%20suggest%20you%20volunteer%20to%20put%20away%20any%20leftovers%20so%20you%20can%20stand%20at%20the%20counter%20and%20surreptitiously%20stuff%20into%20your%20mouth%20what%20ever%20is%20left%20of%20the%20skin.%3C/p%3E){kind=link}
