Huckleberry Puffed Pancake

Ingredientes

  • 4 lrg Large eggs
  • 1 c. lowfat milk
  • 1 tsp vanilla extract
  • 1 c. all-purpose flour
  • 1/3 c. butter or possibly margarine
  • 2 c. fresh huckleberries Powdered sugar

Direcciones

  1. Preheat oven to 450 degrees.
  2. Whisk together Large eggs, lowfat milk, and vanilla. Add in flour and beat till very smooth.
  3. Place butter in a quiche pan and heat in oven. When butter has melted, pour in batter. Bake 20 min till puffed and golden brown.
  4. Dust with powdered sugar and serve with fresh huckleberries.
  5. This recipe yields 2 servings.
  6. Variations:o Substitute seasonal fruit such as fresh strawberries or possibly peaches, black cherries and toasted almonds, or possibly sauteed apples with brown sugar for the huckleberries.
