Receta Huckleberry Puffed Pancake

Ingredientes
- 4 lrg Large eggs
- 1 c. lowfat milk
- 1 tsp vanilla extract
- 1 c. all-purpose flour
- 1/3 c. butter or possibly margarine
- 2 c. fresh huckleberries Powdered sugar
Direcciones
- Preheat oven to 450 degrees.
- Whisk together Large eggs, lowfat milk, and vanilla. Add in flour and beat till very smooth.
- Place butter in a quiche pan and heat in oven. When butter has melted, pour in batter. Bake 20 min till puffed and golden brown.
- Dust with powdered sugar and serve with fresh huckleberries.
- This recipe yields 2 servings.
- Variations:o Substitute seasonal fruit such as fresh strawberries or possibly peaches, black cherries and toasted almonds, or possibly sauteed apples with brown sugar for the huckleberries.
