%20has%20been%20giving%20me%20all%20of%20the%20feels%20as%20I%20write%20this.%3C/p%3E%3Cp%3EPrior%20to%20that%20Orioles%20game,%20actually,%20I%20was%20G-chatting%20with%20Michael%20while%20he%20was%20at%20the%20grocery%20store%20to%20figure%20out%20what%20we%20were%20having%20for%20dinner%20that%20night.%20I%20first%20offered%20to%20pick%20up%20some%20kebabs%20from%20the%20phenomenal%20kebab%20place%20down%20the%20street,%20but%20then%20the%20idea%20to%20have%20hummus%20kawarma%20(from%20Jerusalem:%20a%20Cookbook)%20popped%20into%20my%20head%20and%20I%20suggested%20that%20too.%20Michael%20professed%20a%20preference%20for%20the%20former,%20but%20kindly%20bought%20everything%20I%20would%20need%20for%20the%20latter%20while%20he%20was%20at%20the%20Teet%20and%20we%E2%80%99d%20figure%20we%E2%80%99d%20have%20it%20on%20his%20typical%20gym%20day%20in%20the%20middle%20of%20the%20week.%20The%20timing%20was%20nothing%20if%20not%20apt%E2%80%93after%20a%20few%20tense%20days%20tucking%20into%20a%20bowl%20of%20hummus%20and%20lamb%20was%20exactly%20the%20kind%20of%20comfort%20food%20we%20both%20needed.%3C/p%3E%3Cp%3EI%20make%20this%20fairly%20frequently%20for%20something%20I%E2%80%99ve%20never%20posted%20about,%20and%20so%20I%20feel%20like%20I%E2%80%99ve%20been%20holding%20out%20on%20you%20in%20not%20sharing%20it.%20The%20first%20time%20I%20made%20the%20hummus%20I%20did%20it%20completely%20from%20scratch%20as%20per%20the%20original%20recipe%E2%80%99s%20instructions,%20and%20while%20it%20was%20extremely%20flavorful%E2%80%A6I%20have%20to%20admit,%20it%20did%20feel%20like%20a%20lot%20of%20work%20for%20a%20weeknight%20meal.%20You%20lose%20some%20of%20that%20delicateness%20that%20comes%20from%20cooking%20the%20beans%20yourself%20by%20going%20the%20canned%20route,%20but%20it%20makes%20it%20significantly%20easier%20to%20bring%20together%20when%20you%E2%80%99re%20tired%20after%20a%20long%20day%20at%20work%20or%20just%20want%20to%20make%20the%20hummus%20in%20the%20morning%20before%20you%20head%20out%20to%20start%20your%20day.%3C/p%3E%3Cp%3EThe%20kawarma%20is%20an%20interesting%20mix%20of%20both%20complexity%20and%20quickness.%20Like%20most%20things%20from%20Yotam%20Ottolenghi%20the%20ingredient%20list%20is%20formidable%20(but%20accessible),%20and%20once%20you%E2%80%99ve%20prepped%20and%20mixed%20the%20kawarma%20ingredients%20and%20let%20them%20sit,%20whipping%20up%20a%20simple%20lemon-garlic%20sauce%20and%20cooking%20the%20lamb%20are%20significantly%20faster%20tasks.%20You%E2%80%99re%20rewarded%20for%20all%20that%20hard%20work%20with%20a%20lamb%20that%20serves%20more%20as%20garnish%20than%20main%20course%20but%20is%20the%20tastiest%20ground%20lamb%20you%20might%20ever%20have%20while%20the%20sharpness%20of%20the%20lemon%20sauce%20cuts%20through%20the%20starchiness%20of%20the%20hummus%20and%20the%20fattiness%20of%20the%20butter-saut%C3%A9ed%20lamb.%3C/p%3E%3Cp%3EWhat%20I%20like%20is%20that%20it%E2%80%99s%20a%20comfort%20dish%20for%20warmer%20days,%20since%20the%20hummus%20requires%20no%20stove%20if%20you%20go%20the%20canned%20bean%20way%20and%20the%20lamb%20only%20needs%20all%20of%20five%20to%20eight%20minutes%20to%20finish%20cooking%20all%20the%20way%20through,%20so%20it%20won%E2%80%99t%20fill%20your%20kitchen%20with%20too%20much%20unnecessary%20wasted%20heat.%20You%20can%20serve%20it%20with%20pita%20bread%20if%20you%20like,%20but%20frankly%20I%20like%20eating%20everything%20directly%20out%20of%20a%20bowl%20with%20a%20fork%20or%20spoon,%20depending%20on%20my%20mood.%3C/p%3E%3Cp%3EHummus%20Kawarma%3C/p%3E%3Cp%3Eadapted%20from%20Jerusalem:%20A%20Cookbook%20as%20found%20on%20Serious%20Eats%3C/p%3E%3Cp%3ETo%20make%20the%20kawarma:%20combine%20all%20ingredients%20save%20for%20the%20butter%20or%20ghee%20and%20olive%20oil%20into%20a%20bowl%20and%20let%20sit%20for%20at%20least%2030%20minutes%20in%20the%20fridge.%20While%20the%20meat%20marinates,%20combine%20the%20ingredients%20for%20the%20lemon%20sauce%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20the%20butter%20and%20oil%20on%20a%20large%20saute%20pan%20on%20medium-high%20heat,%20and%20depending%20on%20the%20size%20of%20it%20work%20in%20batches%20to%20cook%20the%20meat.%20(Typically%20batches%20are%20not%20necessary%20even%20when%20I%20use%20a%20pound%20of%20lamb%20because%20I%20have%20a%20big%20pan%20to%20work%20with,%20but%20your%20cookware%20may%20vary.)%20Fry%20for%20about%205-6%20minutes%20all%20told,%20and%20then%20take%20off%20the%20heat.%3C/p%3E%3Cp%3ESpoon%20the%20hummus%20into%20bowls%20and%20then%20add%20the%20warm%20kawarma%20on%20top,%20and%20serve%20with%20the%20lemon%20sauce%20immediately,%20either%20as-is%20or%20with%20warm%20pita%20bread.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
