Ingredientes

  • 1 can (15-ounce) garbanzo beans
  • 1 Tbsp. Tahini
  • 1 x Clove garlic, peeled
  • 1 dsh Crushed red pepper
  • 3 Tbsp. Fresh lemon juice
  • 1 c. Minced tomatoes, *
  • 3/4 c. Minced, seeded cuke
  • 1/4 c. Minced green onions
  • 1/4 c. Minced, pitted Kalamata olives
  • 1/4 c. Crumbled feta, about 1oz
  • 2 Tbsp. Chopped fresh cilantro
  • 1 Tbsp. Chopped fresh mint
  • 4 x 6" pita bread, halved

Direcciones

  1. This is fine if tomatoes are omitted.
  2. Hot the pitas.
  3. Drain the garbanzos in a colander over a bowl, reserving 1T liquid. Combine chickpeas, tahini, garlic, and red pepper in a food processor. Process until smooth, scraping sides of bowl once. Add in lemon juice and reserved chickpea liquid; process until smooth. Spoon mix into a bowl; set aside.
  4. Combine tomatoes, cuke, green onion, olives, feta, cilantro, and mint in a bowl. Spoon 1/4c hummus mix into each pita half. Top with 1/4 c. feta-olive salsa.
  5. Yum!
