%20the%20season%20for%20sweet%20potatoes%20is%20Nov%20thru%20Feb.%20I%E2%80%99m%20not%20opposed%20to%20them%20any%20time%20of%20year%20but%20this%20is%20when%20I%20find%20myself%20cooking%20with%20them%20most%20often.%20My%20only%20problem%20is%20that%20my%20family%20members%20are%20not%20fans%20of%20the%20sweet%20potato.%3C/p%3E%3Cp%3ENow%20in%20all%20fairness,%20I%20don%E2%80%99t%20think%20they%E2%80%99ve%20given%20them%20a%20fair%20shot.%20After%20all,%20I%E2%80%99m%20not%20talking%20candied%20with%20marshmallow%20topping%20here.%20I%E2%80%99m%20talking%20baked%20sweet%20potatoes,%20sweet%20potatoes%20in%20stews,%20sweet%20potato%20fries%20(oh%20%E2%80%93%20I%20have%20a%20recipe%20for%20baking%20those!).%20Recently%20we%20went%20out%20to%20dinner%20and%20I%20had%20a%20baked%20sweet%20potato%20covered%20in%20jerk%20chicken%20and%20mango%20salsa.%20Mmmm%20I%E2%80%99m%20going%20to%20have%20to%20replicate%20that%20sometime,%20but%20until%20I%20do%20%E2%80%93%20I%20have%20a%20super%20easy,%20super%20yummy%20sweet%20potato%20recipe%20for%20you.%20A%20recipe%20where%20you%20would%20not%20expect%20to%20see%20a%20sweet%20potato%E2%80%A6%20like%20quesadillas!%20Yes!!%20Quesadillas!%20And%20the%20crazy%20thing??%20Some%20of%20my%20family%20members%20who%20swear%20they%20don%E2%80%99t%20like%20sweet%20potatoes,%20like%20these.%20Me?%20I%20LOVE%20them.%3C/p%3E%3Cp%3EI%20have%20to%20give%20props%20to%20my%20cousins%20in%20Virginia%20who%20made%20these%20for%20us%20at%20the%20beach%20house%20this%20summer.%20I%20demanded%20they%20share%20the%20recipe,%20it%20came%20straight%20from%20a%20Moosewood%20cookbook%20so%20I%20suppose%20I%20should%20give%20props%20to%20them%20too%3C/p%3E%3Cp%3E1.%20Saute%20the%20onion%20and%20garlic%20in%20the%20oil%20until%20the%20onions%20are%20translucent%20%E2%80%93%20about%205%20minutes.%3C/p%3E%3Cp%3E2.%20Add%20your%20sweet%20potatoes:%3C/p%3E%3Cp%3Eif%20you%20have%20a%20food%20processor%20this%20grating%20part%20is%20a%20snap%3C/p%3E%3Cp%3E3.%20Add%20your%20seasonings:%3C/p%3E%3Cp%3EI'm%20such%20an%20equal%20opportunity%20spice%20brand%20buyer%3C/p%3E%3Cp%3E4.%20Cover%20and%20cook%20for%2010-15%20minutes,%20stirring%20frequently%20to%20prevent%20sticking.%20When%20the%20sweet%20potato%20is%20tender,%20remove%20from%20heat.%3C/p%3E%3Cp%3E5.%20Spread%201/8th%20of%20the%20filling%20and%202%20TB%20of%20cheese%20on%20half%20of%20a%20tortilla,%20fold%20over%20and%20cook%20in%20a%20skillet%20with%20a%20little%20bit%20of%20oil%20until%20the%20tortilla%20is%20lightly%20brown%20on%20both%20sides%20and%20everything%20inside%20is%20all%20melty%20and%20happy.%20Repeat%20until%20you%20run%20out%20of%20filling%20and%20tortillas.%3C/p%3E%3Cp%3E6.%20Serve%20immediately%20with%20your%20favorite%20toppings.%3C/p%3E){kind=link}
