%20loves%20to%20%22stop%20by%20the%20bakery%22%20and%20I%20spent%20many,%20many%20Saturday%20mornings%20tagging%20along.%20Gambino's,%20Haydel's,%20Randazzo's,%20McKenzie's%20(out%20of%20business%20for%20several%20years)...we%20hit%20the%20big%20ones.%20But%20she%20also%20took%20me%20around%20to%20smaller%20bakeries%20too,%20but%20I%20can't%20remember%20any%20of%20their%20names%20and%20don't%20feel%20like%20trying%20to%20find%20out.%20The%20answer%20would%20probably%20be%20one%20I%20hear%20way%20too%20much:%20oh,%20they%20never%20came%20back%20after%20The%20Storm.%3C/p%3E%3Cp%3EMy%20aunt%20almost%20always%20got%20bakalava...she%20introduced%20me%20to%20this%20creation.%20I%20usually%20asked%20for%20a%20Bavarian%20creme%20filled%20doughnut%20or%20an%20%C3%A9clair.%20I%20love%20that%20%C3%A9clairs%20are%20a%20mix%20of%20delicate%20pastry%20and%20decadent%20creamy%20filling.%20Love%20the%20contrast...dainty%20exterior%20and%20in-your-face%20fat%20attack%20interior.%20Oh%20and%20then%20the%20chocolate%20on%20top.%20Oh%20yeah!%3C/p%3E%3Cp%3EI've%20always%20wanted%20to%20try%20my%20hand%20at%20making%20%C3%A9clairs,%20but%20I%20figured%20it%20would%20be%20hard%20or%20I'd%20need%20special%20tools%20for%20working%20with%20the%20p%C3%A2te%20%C3%A0%20choux,%20or%20choux%20paste.%20But%20it%20wasn't%20hard%20and%20I%20didn't%20need%20to%20use%20any%20weird%20gadgetry.%20A%20pastry%20bag%20would%20have%20helped%20for%20forming%20the%20pastries,%20but%20I%20managed%20to%20get%20by%20without%20that.%3C/p%3E%3Cp%3EP%C3%A2te%20%C3%A0%20choux%20can%20be%20turned%20into%20%C3%A9clairs,%20creme%20puffs,%20porfiteroles,%20gougeres,%20croquembouche%20(a%20tower%20of%20creme%20puffs),%20and%20who%20knows%20what%20else.%20I'm%20glad%20I%20sucked%20it%20up%20and%20tried%20this.%20The%20romance%20of%20my%20childhood%20bakery%20trips%20has%20been%20somewhat%20lessened%20knowing%20that%20a%20large%20portion%20of%20what%20was%20on%20display%20was%20made%20from%20the%20same%20recipe...just%20filled%20with%20different%20things.%20But,%20the%20%C3%A9clairs%20were%20good.%20And%20more%20importantly,%20I%20learned%20how%20to%20make%20something%20versatile.%3C/p%3E%3Cp%3EI%20don't%20remember%20where%20I%20found%20this%20%C3%A9clair%20recipe.%20It%20is%20handwritten%20on%20a%20scrap%20of%20paper,%20which%20likely%20means%20it%20is%20from%20one%20of%20my%20mom's%20cookbooks.%20It%20seems%20like%20a%20pretty%20standard%20%C3%A9clair%20recipe.%20These%20%C3%A9clairs%20are%20easy%20to%20make,%20especially%20since%20the%20recipe%20utilizes%20instant%20pudding.%20Would%20it%20be%20better%20with%20homemade%20pudding?%20I%20can't%20comment%20on%20that%20since%20homemade%20pudding%20weirds%20me%20out%20something%20bad%20(it's%20an%20egg%20thing).%3C/p%3E%3Cp%3E%C3%89clairsfrom%20Ms.%20enPlace%3C/p%3E%3Cp%3Efor%20the%20p%C3%A2te%20%C3%A0%20choux:%3C/p%3E%3Cp%3E1%20cup%20water%3C/p%3E%3Cp%3E1%20stick%20unsalted%20butter%3C/p%3E%3Cp%3E1%20cup%20flour%3C/p%3E%3Cp%3E1/4%20tsp%20salt%3C/p%3E%3Cp%3E4%20large%20eggs%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450.%20Boil%20the%20water%20in%20a%20heavy%20pot.%20Add%20the%20butter%20and%20stir%20until%20it%20has%20melted.%20Add%20the%20flour%20(all%20at%20once)%20and%20salt.%20Cook%20and%20stir%20until%20the%20mixture%20forms%20a%20soft%20ball%20of%20dough.%20Remove%20from%20the%20heat%20and%20cool%20for%20about%2010%20minutes.%20Make%20the%20pudding%20while%20you%20wait.%20After%2010%20minutes,%20add%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20The%20dough%20should%20tighten%20up%20after%20adding%20the%20third%20egg.%3C/p%3E%3Cp%3EForm%20dough%20into%20about%20a%20dozen%20oval%20shapes%20on%20a%20greased%20cookie%20sheet.%20Bake%20at%20450%20for%2015%20minutes.%20Lower%20oven%20to%20325%20and%20bake%20for%2020-25%20minutes,%20until%20golden.%20Remove%20from%20oven%20and%20allow%20to%20cool.%20Make%20the%20chocolate%20icing%20while%20they%20cool.%3C/p%3E%3Cp%3Efor%20the%20filling:%3C/p%3E%3Cp%3E1%20small%20box%20(4%20servings)%20instant%20vanilla%20pudding%3C/p%3E%3Cp%3E2%20c%20cold%20milk%3C/p%3E%3Cp%3EFollow%20the%20package%20directions.%20Chill%20until%20ready%20to%20use.%3C/p%3E%3Cp%3Efor%20the%20icing:%3C/p%3E%3Cp%3EMelt%20chocolate%20along%20with%20butter.%20Stir%20until%20smooth.%20Add%201%20c%20powdered%20sugar,%20vanilla,%20and%202%20tbsp%20milk.%20Stir%20until%20smooth.%20Add%20additonal%20tablespoon%20of%20milk%20if%20needed%20to%20thin.%20If%20too%20thin,%20add%20more%20powdered%20sugar.%3C/p%3E%3Cp%3ENow%20that%20the%20three%20components%20are%20ready,%20start%20assembling%20your%20%C3%A9clairs.%20Fill%20the%20bottoms%20with%20about%202%20tablespoons%20of%20pudding%20then%20replace%20the%20tops.%20Ice%20with%20chocolate.%20Store%20in%20the%20refrigerator%20loosely%20covered%20to%20avoid%20moisture%20build-up.%3C/p%3E%3Cp%3EMise%20enplace%20for%20all%20three%20components.%20Nothing%20unusual%20and%20no%20weird%20gadgets%20required.%3C/p%3E%3Cp%3EBoil%20the%20water.%20Add%20b
