.%3C/p%3E%3Cp%3EOh%20yes,%20not%20forgetting%20the%20fact%20that%20I%20have%20one%20drawer%20full%20of%20paper%20muffin%20cups!%3C/p%3E%3Cp%3EIt%20took%20me%20just%20slightly%20over%20half%20an%20hour%20from%20reading%20the%20recipe%20to%20popping%20these%20muffins%20into%20the%20oven.%20I%20have%20adapted%20a%20cinnamon%20and%20nuts%20muffins%20recipe%20to%20turn%20it%20into%20a%20batch%20of%20Cinnamon,%20Walnuts%20and%20Chocolate%20Chips%20Muffins.%20%20Before%20I%20was%20done%20washing%20up%20the%20mixing%20bowls,%20I%20could%20already%20smell%20cinnamon%20:)Warm,%20freshly%20baked,%20homemade%20muffins%20are%20not%20only%20a%20nice%20treat%20for%20breakfast%20but%20also%20great%20for%20a%20casual%20tea%20time%20at%20home.%20These%20muffins%20are%20full%20flavour,%20certainly%20not%20a%20surprise%20as%20they%20are%20studded%20with%20all%20the%20walnuts,%20chocolate%20chips%20and%20cinnamon.%20The%20texture%20is%20a%20teeny%20weeny%20on%20the%20dry%20side...maybe%20they%20are%20made%20with%20milk%20only...I%20guess%20I%20am%20so%20used%20to%20the%20very%20moist%20muffins%20made%20with%20yoghurt.I%20am%20so%20inspired%20by%20these%20lovely%20muffins%20that%20I%20think%20I%20have%20done%20a%20decent%20job%20in%20the%20composition%20of%20the%20above%20images.%20Of%20course,%20I%20must%20thank%20my%20cyberfriend%20VB%20for%20sending%20me%20the%20pretty%20muffin%20liners,%20gorgeous%20kitchen%20towels%20and%20the%20matching%20mug!%20I%20could%20almost%20imagine%20myself%20sitting%20inside%20a%20lovely%20little%20cafe%20at%20a%20little%20town%20in%20Provence,%20drinking%20tea%20and%20savouring%20muffins...%20ahem...delicate%20French%20desserts%20;)%3C/p%3E%3Cp%3ECinnamon%20Walnuts%20and%20Chocolate%20Chips%20Muffins%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E(makes%209%20regular%20size%20muffins)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20whisk%20together%20milk,%20oil,%20egg%20and%20vanilla%20extract,%20until%20just%20combined.%3C/p%3E%3Cp%3ESieve%20flour,%20baking%20powder%20and%20ground%20cinnamon%20into%20another%20mixing%20bowl.%20Add%20sugar,%20salt%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EPour%20the%20wet%20ingredients%20into%20the%20dry%20ingredients.%20With%20a%20rubber%20spatula,%20fold%20the%20wet%20ingredients%20into%20the%20dry%20ingredients%20and%20stir%20only%20until%20the%20ingredients%20are%20just%20combined%20(Note:%20stop%20stirring%20once%20the%20flour%20incorporates%20into%20the%20batter,%20but%20do%20check%20that%20there%20is%20no%20pockets%20of%20flour%20at%20the%20bottom%20of%20the%20bowl).%3C/p%3E%3Cp%3EReserve%201%20tablespoon%20each%20of%20the%20chopped%20walnuts%20and%20chocolate%20chips.%20Gently%20stir%20in%20the%20rest%20of%20the%20chopped%20walnuts%20and%20chocolate%20chips%20into%20the%20batter.%20Do%20Not%20over%20mix%20the%20batter.%20The%20finished%20batter%20should%20appear%20thick%20and%20lumpy.%3C/p%3E%3Cp%3ESpoon%20batter%20into%20paper%20muffin%20cups,%20fill%20it%20to%20about%203/4%20full.%3C/p%3E%3Cp%3ESprinkle%20top%20with%20the%20reserved%20chopped%20walnuts%20and%20chocolate%20chips.%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20at%20200degC%20for%20about%2020%20-%2025mins%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20a%20muffin%20comes%20out%20clean.%20Transfer%20to%20a%20wire%20rack%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3ERecipe%20source:%20adapted%20from%20%E6%88%91%E7%9A%84%E5%B9%B8%E7%A6%8F%E6%89%8B%E4%BD%9C%E9%9D%A2%E5%8C%85%EF%BC%8C%E6%9D%8E%E6%88%90%E5%AE%9E%3C/p%3E){kind=link}
