%20featured%20chef%20last%20year.%20%20Food%20from%20Many%20Greek%20Kitchens%20was%20my%20introduction%20to%20Tessa%20Kiros,%20and%20it%20was%20quite%20an%20%20introduction.%20%20It%20still%20remains%20one%20of%20my%20favorite%20cookbooks%20on%20my%20shelves.%3C/p%3E%3Cp%3EThe%20stories%20Kiros%20tells%20in%20her%20books%20are%20full%20of%20things%20I%20want%20to%20read--history%20and%20lore%20related%20to%20her%20recipes.%20%20These%20personal%20stories%20highlight%20those%20real%20life%20moments%20that%20elevate%20recipes%20to%20family%20favorite%20status.%20%20These%20personal%20stories%20make%20for%20my%20favorite%20type%20of%20cookbook.%20%20I'm%20not%20here%20just%20for%20the%20food.%20%20I'm%20here%20for%20what%20started%20the%20food%20in%20the%20first%20place,%20what%20the%20food%20means%20today,%20and%20what%20carries%20on%20after%20it.%3C/p%3E%3Cp%3EIn%20case%20you're%20now%20thinking%20that%20Kiros%20is%20full%20of%20huggy,%20touchy-feely%20fluff,%20I'm%20going%20to%20add%20that%20her%20recipes%20are%20solid.%20%20Out%20of%20everything%20I've%20made%20(%3E%2030%20recipes),%20only%20two%20didn't%20work%20out.%20%20And%20one%20of%20those%20was%20because%20I%20horribly%20mismeasured%20tahini.%20%20My%20bad.%3C/p%3E%3Cp%3EA%20new%20feature%20during%20IHCC%20Potluck%20Week,%20which%20happens%20once%20a%20month,%20is%20that%20ANY%20current%20or%20previous%20chef%20is%20fair%20game.%20%20I%20had%20to%20pull%20my%20Tessa%20Kiros%20books%20down%20from%20the%20shelf.%20%20There%20are%20still%20many%20recipes%20I%20want%20to%20try.%3C/p%3E%3Cp%3EThis%20Gratin%C3%A9ed%20Tomato%20dish%20from%20Twelve,%20for%20example.%3C/p%3E%3Cp%3EIt%20is%20a%20simple%20dish.%20%20But%20there's%20a%20certain%20elegance%20in%20it.%20%20In%20the%20individual%20portions%20of%20tomato%20halves%20sitting%20on%20my%20plate%20rather%20than%20a%20scoop%20cut%20from%20a%20casserole%20dish.%20%20There's%20also%20versatility.%20%20Herbs%20and%20cheeses%20can%20be%20switched%20out.%20%20We%20ate%20these%20tomatoes%20alongside%20grilled%20steaks%20for%20The%20Husband's%20birthday.%20%20Fish,%20chicken,%20burgers,%20sandwiches,%20or%20soup%20would%20also%20have%20worked.%3C/p%3E%3Cp%3EGratin%C3%A9ed%20Tomatoes%3C/p%3E%3Cp%3Eadapted%20from%20Twelve%20by%20Tessa%20Kiros%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EHalve%20the%20tomatoes%20lengthwise.%20%20Scoop%20out%20the%20flesh%20and%20seeds,%20leaving%20the%20shell%20intact.%20%20Place%20the%20empty%20tomato%20halves%20into%20a%20baking%20dish%20cut%20side%20up,%20and%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EFinely%20chop%20the%20tomato%20flesh%20and%20seeds%20and%20put%20into%20a%20bowl.%20Add%20the%20fresh%20herbs,%20garlic,%20oregano,%202%20Tbsp%20olive%20oil,%202%20Tbsp%20Parmesan%20cheese,%20and%201%201/2%20Tbsp%20bread%20crumbs.%20%20Season%20the%20mixture%20with%20salt%20and%20pepper.%20%20Gently%20but%20thoroughly%20mix.%3C/p%3E%3Cp%3EDistribute%20the%20mixture%20evenly%20among%20the%20tomato%20halves.%20%20Mix%20the%20remaining%20Parmesan%20cheese%20and%20bread%20crumbs%20together.%20%20Top%20the%20tomatoes%20with%20this%20mixture.%20%20Drizzle%20the%20remaining%20olive%20oil%20over%20the%20bread%20crumb%20mixture.%20%20Bake%20about%2030%20minutes%20until%20the%20bread%20crumbs%20are%20golden.%3C/p%3E){kind=link}
