%20I%20thought%20this%20called%20for%20a%20celebration%20-%20a%20fancy%20new%20salmon%20recipe!%20I%20googled%20Salmon%20Wellington%20and%20found%20this%20recipe%20from%20Canadian%20Living.%20I%20made%20a%20few%20modifications%20based%20on%20what%20was%20available%20at%20the%20grocery%20store,%20and%20it%20turned%20out%20perfectly!%3C/p%3E%3Cp%3EFirst,%20prepare%20the%20stuffing:%20In%20a%20food%20processor,%20combine%20shrimp,%20egg%20white,%201/2%20c.%20whipping%20cream,%20lemon%20juice,%20basil,%20salt%20&%20pepper.%20Blend%20together%20and%20then%20refrigerate%20for%20an%20hour.%20(Not%20sure%20if%20that's%20necessary,%20but%20I%20did%20it%20anyway.)%3C/p%3E%3Cp%3EBlanch%20spinach%20in%20boiling%20water%20and%20pat%20dry%20on%20a%20towel.%20(I%20trimmed%20the%20stems%20off%20the%20spinach%20-%20very%20time%20consuming,%20probably%20wouldn't%20bother%20with%20it%20next%20time.)%20Roll%20out%20puff%20pastry%20on%20a%20floured%20surface.%20It%20should%20be%20slightly%20longer%20and%20almost%20twice%20as%20wide%20as%20your%20piece%20of%20salmon.%20Transfer%20pastry%20to%20a%20baking%20sheet%20lined%20with%20parchment%20paper.%20Cover%20with%20spinach%20(leaving%20a%20couple%20inches%20around%20the%20edges)%20and%20then%20spread%20half%20the%20stuffing%20mixture%20overtop.%20Lay%20salmon%20on%20top%20(I%20cut%20slits%20in%20the%20salmon%20just%20to%20ensure%20it%20would%20cook%20evenly.)%20Top%20with%20the%20remaining%20stuffing%20mixture.%20In%20a%20small%20dish,%20mix%20the%20egg%20yolk%20with%20a%20bit%20of%20water%20and%20brush%20it%20around%20the%20edges%20of%20the%20pastry.%20Fold%20up%20the%20top%20and%20bottom%20edges,%20overlapping%20in%20the%20middle%20of%20the%20salmon%20to%20seal%20it,%20and%20then%20close%20up%20the%20ends.%20Brush%20with%20egg%20yolk%20mixture%20and%20cut%20a%20few%20slits%20along%20the%20top.%20Bake%20at%20400%20F%20for%2030%20minutes.%3C/p%3E%3Cp%3EWhile%20baking,%20saut%C3%A9%20leeks%20in%20a%20bit%20of%20butter%20until%20they%20are%20soft.%20Transfer%20to%20a%20saucepan%20and%20add%201/2%20c.%20white%20wine.%20Bring%20to%20a%20boil%20and%20then%20simmer%20until%20wine%20has%20evaporated.%20Add%201/2%20c.%20whipping%20cream%20and%20simmer%20for%204-5%20minutes,%20then%20stir%20in%20cubes%20of%20butter%20and%20stir%20until%20melted.%20Season%20with%20pepper,%20then%20pour%20a%20little%20on%20each%20plate%20before%20placing%20the%20pieces%20of%20salmon%20wellington%20on%20top.%3C/p%3E%3Cp%3EI%20wish%20we%20would%20have%20had%20friends%20over%20tonight%20to%20share%20in%20this%20wonderful%20meal.%20It's%20perfect%20for%20a%20dinner%20party%20-%20looks%20fancy,%20easy%20to%20serve,%20and%20it%20makes%20a%20huge%20amount%20(you%20could%20easily%20have%208%20servings.)%20The%20whole%20family%20ate%20it%20(even%20William!)%3C/p%3E){kind=link}
