%20lies%20in%20cultural%20influences.%20%20African%20slaves%20in%20the%20Southern%20US%20thought%20that%20sweet%20potatoes%20were%20similar%20to%20their%20native%20African%20yams.%20%20So%20they%20referred%20to%20sweet%20potatoes%20as%20%22nyami.%22%3C/p%3E%3Cp%3ELouisiana%20produces%20a%20significant%20share%20of%20sweet%20potatoes%20in%20the%20US.%20%20Opelousas,%20one%20of%20LA's%20oldest%20cities,%20hosts%20the%20annual%20Yambilee%20Festival.%20%20Not%20the%20Sweet%20Potato%20Festival,%20but%20Yambilee.%20%20Why%20use%20the%20term%20%22yam%22%20when%20that's%20not%20technically%20what's%20being%20grown?%20%20Because%20to%20LA%20farmers%20those%20orange%20roots%20are%20yams...Louisiana%20Yams.%20%20Also%20according%20to%20the%20LSU%20AgCenter,%20in%20the%201930s%20LA%20farmers%20wanted%20to%20set%20their%20sweet%20potatoes%20apart%20from%20the%20rest%20of%20what%20was%20grown%20in%20the%20US.%20%20The%20variety%20that%20LA%20farmers%20grew%20back%20then%20was%20a%20Puerto%20Rican%20one%20and,%20at%20the%20time,%20was%20different%20than%20what%20was%20being%20grown%20in%20the%20rest%20of%20the%20country.%20%20(This%20isn't%20the%20case%20any%20longer).%20%20%20These%20sweet%20potatoes%20were%20sweeter,%20fluffier,%20and%20the%20flesh%20more%20orange.%20%20So,%20they%20were%20called%20yams.%20%20Louisiana%20Yams.%3C/p%3E%3Cp%3EAbout%20this%20time%20last%20year,%20I%20wrote%20about%20my%20Great-grandma%20Vick's%20specialty%20and%20family%20favorite,%20Sweet%20Potato%20Crunch.%20%20This%20year%20I%20wanted%20to%20share%20the%20sweet%20potato%20recipe%20that%20is%20my%20husband's%20favorite:%20Praline%20Yams.%20%20It's%20similar%20to%20my%20great-grandma's%20since%20it%20has%20a%20sweet%20pecan%20topping%20and%20no%20marshmallows.%20%20I%20really%20can't%20stand%20the%20marshmallow%20type%20of%20sweet%20potato%20casserole.%20%20Anyway,%20I%20found%20this%20recipe%20many%20years%20ago%20on%20the%20back%20of%20a%20can%20of%20Sugary%20Sam's%20Sweet%20Potatoes.%20%20I%20changed%20the%20recipe%20a%20little%20since%20no%20respectable%20praline%20would%20be%20caught%20dead%20with%20coconut...and%20we%20don't%20like%20coconut%20anyway.%3C/p%3E%3Cp%3EI%20prefer%20making%20grandma%20Vick's%20sweet%20potato%20dish%20and%20using%20%22fresh%22%20sweet%20potatoes...the%20quotation%20marks%20because%20sweet%20potatoes%20are%20cured%20for%20a%20few%20weeks%20after%20harvesting%20to%20up%20the%20sweetness.%20%20But%20back%20to%20fresh%20v.%20canned.%20%20Let's%20face%20it,%20Thanksgiving%20plans%20usually%20end%20up%20spinning%20out%20of%20control%20and%20extra%20kitchen%20prep%20is%20about%20as%20welcome%20as%20an%20alligator%20to%20my%20Thanksgiving%20backyard%20turkey%20fry.%20%20Using%20canned%20yams%20definitely%20saves%20some%20time.%3C/p%3E%3Cp%3EHere's%20the%20meez:%20pecans,%20brown%20sugar,%20flour,%20butter,%20canned%20yams.%20%20Yep,%20that's%20really%20all%20there%20is%20to%20it!%3C/p%3E%3Cp%3EBe%20sure%20to%20drain%20the%20yams.%20%20And%20look...don't%20go%20dirty%20any%20extra%20dishes!%20%20Go%20almost%20all%20the%20way%20around%20the%20can%20with%20your%20can%20opener%20and%20use%20the%20lid%20to%20help%20drain%20away%20the%20juices.%20%20Trick%20from%20mom.%3C/p%3E%3Cp%3ESometimes%20I%20spend%20more%20time%20scheming%20to%20avoid%20dirty%20dishes%20than%20actually%20cooking.%3C/p%3E%3Cp%3EPlace%20the%20yams%20in%20a%20greased%20casserole%20dish.%20%20If%20some%20of%20the%20chunks%20are%20bigger%20than%20you'd%20like,%20take%20control%20and%20cut%20'em.%20%20You're%20the%20boss.%3C/p%3E%3Cp%3EMix%20together%20the%20pecans,%20brown%20sugar,%20flour,%20and%20melted%20butter%20to%20make%20the%20topping.%20%20Don't%20worry,%20it's%20supposed%20to%20be%20thick.%3C/p%3E%3Cp%3ESince%20it%20is%20so%20thick%20and%20paste-like,%20I%20just%20use%20my%20hands.%20%20I%20promise%20they're%20clean.%3C/p%3E%3Cp%3EI'm%20making%20half%20a%20recipe%20here,%20since%20it%20isn't%20Thanksgiving%20yet%20and%20I%20don't%20need%20all%20that%20food.%20%20But,%20I'm%20still%20using%20a%202%20qt%20dish.%20%20When%20making%20the%20full%20recipe,%20I%20use%20one%20larger%20than%202%20qt%20that%20way%20almost%20every%20sweet%20potato%20chunk%20gets%20coated%20in%20the%20sweet,%20nutty%20topping.%20But%20that's%20just%20me.%20%20I%20like%20to%20play%20fair%20with%20the%20topping.%3C/p%3E%3Cp%3EBake%20for%2035-45%20minutes%20at%20350.%3C/p%3E%3Cp%3EAnd%20here%20it%20is,%20all%20baked%20up.%20%20The%20pecans%20are%20toasty%20and%20the%20topping%20is%20a%20little%20bit%20crunchy%20and%20a%20little%20bit%20gooey.%20%20And%20I'm%20going%20in.%3C/p%3E%3Cp%3EHeat%20oven%20to%20350.%20Place%20drained%20yams%20in%20an%20ungreased%202%20qt%20casserole%20or%20baking%20dish.%20%20(Note:%20I%20like%20to%20spread%20the%20yams%20out%20even%20more%20in%20a%20larger%20dish%20so%20that%20the%20topping%20is%20more%20evenly%20distributed)%20%20If%20some%20pieces%20are%20too%20large,%20cut%20them%20to%20the%20size%20you'd%20like.%20%20In%20a%20small%20bowl,%20combine%20remaining%20ingredients;%20blend%20well.%20Sprinkle%20over%20yams.%20Bake%20at%20350%20for%2035-45%20minutes%20or%20until%20bubbly.%3C/p%3E){kind=link}
