%3C/p%3E%3Cp%3EThey%20have%20all%20of%20these%20crazy%20sundaes%20with%20wild%20mixtures%20of%20flavors%20and%20fun%20names,%20but%20for%20me%20it's%20all%20about%20a%20single%20scoop%20hot%20fudge%20sundae.%20%20I%20don't%20need%20anything%20super%20fancy,%20just%20really%20good%20ice%20cream%20and%20LOTS%20of%20hot%20fudge%20and%20of%20course,%20the%20cherry%20on%20top!%3C/p%3E%3Cp%3EI%20came%20home%20Monday%20and%20couldn't%20stop%20thinking%20about%20how%20much%20fun%20it%20would%20be%20to%20make%20a%20cupcake%20that%20looked%20like%20a%20sundae.%20%20I%20could%20make%20a%20fudgy%20cupcake%20to%20resemble%20the%20scoop%20of%20chocolate%20ice%20cream;%20the%20vanilla%20swiss%20meringue%20buttercream%20(big%20shocker)%20would%20look%20like%20whipped%20cream%20but%20taste%20more%20like%20a%20scoop%20of%20homemade%20vanilla%20ice%20cream;%20drizzle%20homemade%20(or%20store%20bought)%20caramel%20sauce%20and%20homemade%20(or%20store%20bought)%20fudge%20sauce%20over%20the%20top%20and%20add%20a%20cherry!%20%20VOILA....Ice%20Cream%20Sundae%20Cupcakes!%3C/p%3E%3Cp%3EI%20think%20these%20are%20the%20very%20epitome%20of%20a%20celebration%20cupcake,%20they%20just%20look%20so%20fun%20and%20festive!%20%20Um...they%20are%20also%20irresistible,%20the%20boys%20and%20I%20actually%20ate%20them%20%20before%20dinner!%20%20What?!%20%20There's%20nothing%20wrong%20with%20that!%20%20Cupcakes%20make%20fabulous%20appetizers!%20%20Really....trust%20me....I'm%20starting%20a%20trend!%3C/p%3E%3Cp%3EJust%20look%20at%20how%20cute%20they%20turned%20out!%20%20Don't%20you%20want%20to%20make%20some??%3C/p%3E%3Cp%3EIce%20Cream%20Sundae%20Cupcakes%3C/p%3E%3Cp%3EThe%20Cupcake:%20%20via%20Barefoot%20Contessa%20At%20Home%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%20Line%20cupcake%20pans%20with%20paper%20liners.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20a%20paddle%20attachment,%20cream%20the%20butter%20and%202%20sugars%20on%20high%20speed%20until%20light%20and%20fluffy,%20approximately%205%20minutes.%20Lower%20the%20speed%20to%20medium,%20add%20the%20eggs%201%20at%20a%20time,%20then%20add%20the%20vanilla%20and%20mix%20well.%20In%20a%20separate%20bowl,%20whisk%20together%20the%20buttermilk,%20sour%20cream,%20and%20coffee.%20In%20another%20bowl,%20sift%20together%20the%20flour,%20cocoa,%20baking%20soda,%20and%20salt.%20On%20low%20speed,%20add%20the%20buttermilk%20mixture%20and%20the%20flour%20mixture%20alternately%20in%20thirds%20to%20the%20mixer%20bowl,%20beginning%20with%20the%20buttermilk%20mixture%20and%20ending%20with%20the%20flour%20mixture.%20Mix%20only%20until%20blended.%20Fold%20the%20batter%20with%20a%20rubber%20spatula%20to%20be%20sure%20it's%20completely%20blended.%3C/p%3E%3Cp%3EDivide%20the%20batter%20among%20the%20cupcake%20pans%20and%20bake%20in%20the%20middle%20of%20the%20oven%20for%20approx%2018%20minutes,%20until%20a%20toothpick%20comes%20out%20clean.%20Cool%20for%2010%20minutes,%20remove%20from%20the%20pans,%20and%20allow%20to%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EVanilla%20Swiss%20Meringue%20Buttercream:%3C/p%3E%3Cp%3E5%20large%20egg%20whites%3C/p%3E%3Cp%3E11/2%20cup%20sugar%3C/p%3E%3Cp%3E4%20sticks%20unsalted%20butter,%20diced%20and%20softened%3C/p%3E%3Cp%3E1/4%20teaspoon%20salt%3C/p%3E%3Cp%3E1%20tablespoon%20vanilla%3C/p%3E%3Cp%3ECombine%20egg%20whites%20and%20sugar%20in%20a%20bowl%20placed%20over%20simmering%20water.%20Bring%20mixture%20to%20150%20degrees%20F%20while%20whisking%20constantly.%3C/p%3E%3Cp%3ETransfer%20mixture%20to%20stand%20mixer%20bowl,%20fitted%20with%20a%20whisk%20attachment%20and%20beat%20on%20medium%20speed%20until%20mixture%20cools%20and%20doubles%20in%20volume.%3C/p%3E%3Cp%3EAdd%20butter%20in%20one%20piece%20at%20a%20time,%20mixing%20to%20incorporate%20after%20each%20addition.%20The%20mixture%20may%20appear%20clumpy%20and%20almost%20curdled%20looking-this%20is%20normal.%20Keep%20mixing%20and%20it%20will%20become%20even%20and%20smooth%20again.%20Add%20salt%20and%20vanilla%20and%20mix%20to%20combine.%3C/p%3E%3Cp%3EAssemble%20Cupcake:%3C/p%3E%3Cp%3EFrost%20cooled%20cupcakes%20to%20look%20like%20whipped%20cream.%20%20Drizzle%20hot%20fudge%20sauce%20and%20caramel%20sauce%20%20over%20the%20buttercream%20and%20top%20with%20a%20cherry!%20%20Feel%20free%20to%20use%20store%20bought%20sauces%20or%20make%20homemade.%20%20Keep%20it%20simple!%20%20:)%3C/p%3E%3Cp%3ERecipe%20Shared%20On:%3C/p%3E%3Cp%3EWeekend%20Kitchen%20Creations%3C/p%3E%3Cp%3EAdorned%20From%20Above%20-%20Wednesdays%20Blog%20Hop%3C/p%3E%3Cp%3E21st%20Century%20Housewife%20-%20Hearth%20and%20Soul%20Blog%20Hop%3C/p%3E%3Cp%3EMy%20Turn%20For%20Us%20-%20Freedom%20Fridays%3C/p%3E%3Cp%3EChocolate,%20Chocolate,%20and%20More%20-%20Thursdays%20Treasures%3C/p%3E%3Cp%3EFoodie%20Friends%20Friday%3C/p%3E){kind=link}
