,%20picked%20out%20and%20post%20written%20since%20early%20last%20week.%20%20Very%20happy%20to%20have%20the%20chance%20to%20put%20the%20recipe%20out%20there.%3C/p%3E%3Cp%3EBut%20I%20misunderstood%20the%20theme.%20%20I%20was%20thinking%20%22Out%20of%20Italy%22%20as%20in%20straight%20out%20of%20the%20heart%20of%20Itlay,%20classic,%20no%20questions%20asked,%20Italian%20food.%20%20As%20in%20not%20the%20cuisine%20Giada%20usually%20cooks%20up,%20which%20would%20be%20%22Out%20of%20California.%22%20%20I'm%20not%20neccessarily%20stupid;%20I%20just%20hear%20(read)%20what%20I%20want%20to%20hear%20(read)!%20%20Turns%20out%20we're%20supposed%20to%20leave%20Italy%20this%20week%20for%20IHCC%20and%20dip%20spoons%20into%20Giada's%20non-Italian%20creations.%3C/p%3E%3Cp%3EI'm%20a%20waste-not-want-not%20kinda%20girl%20and%20can't%20let%20a%20perfectly%20good%20post%20go%20to%20waste.%20%20So%20I'm%20stickin%20with%20the%20chickin.%20%20Besides,%20I%20don't%20travel%20well%20anyway.%3C/p%3E%3Cp%3ESome%20sources%20claim%20that%20Catherine%20de%20Medici%20introduced%20spinach%20to%20France%20when%20she%20left%20Italy%20to%20marry%20her%20French%20husband,%20King%20Henry%20II.%20%20The%20cooks%20she%20brought%20with%20her%20whipped%20up%20some%20home%20cookin'%20for%20her%20and%20the%20French%20court.%20%20As%20a%20shout%20out%20to%20her%20peeps%20in%20Florence,%20Italy,%20she%20added%20the%20term%20%22florentine%22%20to%20dishes%20containing%20spinach.%20%20If%20this%20dish%20can%20leave%20Italy%20and%20travel%20to%20France,%20where%20I'm%20sure%20over%20the%20centuries%20it%20has%20taken%20on%20some%20French%20influences,%20I'm%20using%20it!%3C/p%3E%3Cp%3EWhether%20the%20Medici%20story%20is%20accurate%20or%20not,%20we've%20been%20swooning%20over%20Giada's%20Chicken%20Florentine%20Style%20for%20years.%20%20And%20every%20time%20we%20eat%20it%20we%20think%20it's%20better%20than%20the%20last.%3C/p%3E%3Cp%3EIf%20you%20don't%20know%20me%20by%20now%3C/p%3E%3Cp%3E...you%20will%20never%20never%20never%20know%20me.%3C/p%3E%3Cp%3EBut%20if%20you%20do%20know%20me,%20you%20know%20that%20I%20can't%20(refuse%20to?)%20follow%20a%20recipe.%20%20I'm%20a%20tweaker.%20%20Wait.%20%20That%20doesn't%20sound%20quite%20right.%3C/p%3E%3Cp%3EBy%20now%20you%20should%20know%20that%20I%20totally%20cheap%20out%20and%20don't%20spend%20the%20extra%20$%20on%20something%20fancy%20like%20shallots.%20%20Three%20pound%20bag%20of%20onions%20on%20sale%20for%2099%20cents%20a%20bag%20last%20week.%20%20Ha!%20%20Suck%20on%20that!%3C/p%3E%3Cp%3EI%20do%20not,%20however,%20cheap%20out%20on%20the%20booze.%20%20Don't%20sub%20chicken%20broth%20for%20the%20wine%20no%20matter%20the%20cost%20per%20ounce%20difference.%20%20This%20girl%20sauce%20needs%20the%20wine.%3C/p%3E%3Cp%3EYou%20should%20also%20know%20by%20now%20that%20I'm%20going%20to%20season%20the%20dredging%20flour%20with%20salt,%20black%20pepper,%20and%20a%20pinch%20of%20cayenne.%20%20Why%20would%20I%20bread%20anything%20with%20plain%20flour?%3C/p%3E%3Cp%3EAnd%20you%20should%20know%20by%20now%20that%20I%20love%20all%20things%20gravy%20and%20sauce.%20%20I%20add%20about%201/4%20c%20of%20the%20sauce%20to%20the%20spinach%20because%20spinach%20deserves%20boozy%20love%20too.%20%20Don't%20we%20all?%3C/p%3E%3Cp%3EChicken%20Florentine%20Style%3C/p%3E%3Cp%3Eslightly%20adapted%20from%20from%20Everyday%20Italian%3C/p%3E%3Cp%3ESprinkle%20the%20chicken%20with%20seasonings.%20Also%20season%20the%20flour.%20Dredge%20the%20chicken%20in%20the%20flour%20to%20coat%20lightly.%20Shake%20off%20any%20excess%20flour.%20Melt%201%20tablespoon%20of%20butter%20and%201%20tablespoon%20of%20olive%20oil%20in%20a%20heavy%20large%20skillet%20over%20medium%20heat.%20Add%20the%20chicken.%20Brown%20and%20cook%20until%20almost%20done.%20Transfer%20the%20chicken%20to%20a%20plate%20and%20tent%20with%20foil%20to%20keep%20it%20warm.%3C/p%3E%3Cp%3EMelt%201%20tablespoon%20of%20butter%20in%20the%20same%20skillet%20over%20medium%20heat.%20Add%20the%20onion%20and%20garlic%20and%20saut%C3%A9%20until%20the%20onions%20are%20translucent,%20stirring%20to%20scrape%20up%20any%20browned%20bits%20on%20the%20bottom%20of%20the%20skillet.%20Add%20the%20wine.%20Increase%20the%20heat%20to%20medium-high%20and%20boil%20until%20the%20liquid%20is%20reduced%20by%20half,%20about%203%20minutes.%20Add%20the%20cream%20and%20boil%20until%20the%20sauce%20reduces%20by%20half,%20stirring%20often.%20Stir%20in%20the%20parsley.%20Season%20the%20sauce,%20to%20taste,%20with%20salt%20and%20pepper.%20Add%20the%20chicken%20and%20any%20accumulated%20juices%20to%20the%20sauce,%20and%20turn%20the%20chicken%20to%20coat%20in%20the%20sauce.%20Simmer%20to%20finish%20cooking%20the%20chicken%20while%20you%20cook%20the%20spinach.%3C/p%3E%3Cp%3EMeanwhile,%20melt%20the%20remaining%20tablespoon%20of%20butter%20in%20another%20large%20skillet%20over%20medium%20heat.%20Add%20the%20spinach%20and%20saut%C3%A9%20until%20heated%20through.%20Add%20about%201/4%20cup%20of%20the%20sauce%20to%20the%20spinach.%3C/p%3E%3Cp%3EPlace%
