%20for%20this%20week's%20celebration%20of%20spices%20as%20well%20as%20several%20other%20recipes%20I%20have%20in%20the%20wings.%3C/p%3E%3Cp%3EOr%20in%20this%20case,%20leg%20quarters.%20For%20the%20Spice%20Bazaar%20theme,%20I%20chose%20a%20recipe%20from%20Madhur%20Jaffrey's%20Quick%20and%20Easy%20Indian%20Cooking%20that%20not%20only%20had%20plenty%20of%20spices,%20but%20was%20said%20to%20be%20spicy%20itself.%3C/p%3E%3Cp%3ESpicy%20Grilled%20Chicken%3C/p%3E%3Cp%3EThe%20chicken%20is%20first%20coated%20in%20a%20paste%20made%20with%20a%20variety%20of%20spices:%20salt,%20pepper,%20cayenne,%20paprika,%20cumin,%20oregano,%20and%20garam%20masala%20(a%20spice%20I%20have%20never%20used%20before).%20%20Crushed%20garlic,%20yogurt,%20and%20oil%20are%20also%20added%20to%20form%20the%20paste.%20%20I%20decided%20to%20let%20the%20chicken%20sit%20in%20the%20fridge%20overnight%20wearing%20this%20aromatic%20and%20tasty%20paste.%20%20The%20spice%20paste%20won%20me%20over%20right%20away.%3C/p%3E%3Cp%3EI%20may%20as%20well%20tell%20you%20that%20the%20aroma%20was%20so%20intriguing,%20I%20couldn't%20help%20but%20dip%20in%20a%20finger.%20%20Before%20anything%20touched%20the%20chicken,%20of%20course.%3C/p%3E%3Cp%3EWe%20all%20liked%20the%20chicken,%20although%20I%20think%20it%20could%20have%20used%20a%20little%20more%20cayenne.%20%20I%20tend%20to%20have%20a%20problem%20with%20bone-in,%20skin-on%20chicken%20burning%20on%20the%20outside%20before%20the%20inside%20is%20cooked%20on%20the%20grill,%20so%20I%20baked%20the%20chicken%20for%20about%2015-20%20minutes,%20then%20finished%20on%20the%20grill.%3C/p%3E%3Cp%3EJaffrey%20suggests%20serving%20this%20Yogurt%20w/%20Tomato%20and%20Cucumber%20(Raita)%20with%20spicy%20dishes.%3C/p%3E%3Cp%3EI'm%20not%20going%20to%20argue%20one%20bit.%20%20I%20think%20the%20raita%20was%20my%20favorite%20part%20of%20the%20meal.%20%20Strange%20since%20I%20don't%20jump%20up%20and%20down%20over%20cucumbers.%20%20Because%20that%20would%20be%20messy.%3C/p%3E%3Cp%3ENot%20only%20does%20Jaffrey%20suggest%20serving%20this%20alongside%20spicy%20dishes,%20she%20also%20claims%20it%20can%20be%20eaten%20solo.%20%20Now%20that%20was%20odd%20to%20me--eating%20a%20bowl-full%20of%20yogurt%20studded%20with%20cucumber%20and%20tomato.%20%20When%20I%20eat%20bowls%20of%20yogurt,%20it's%20always%20sweet.%20%20However,%20after%20taste-testing%20the%20raita%20(gotta%20get%20the%20seasonings%20right...right?),%20I%20could%20have%20eaten%20all%20of%20it%20as%20is.%3C/p%3E%3Cp%3EMore%20Madhur%20Jaffrey%20dishes%20can%20be%20found@%20I%20Heart%20Cooking%20Clubs.%20%20Who%20knows?%20%20Maybe%20you'll%20join%20us?%3C/p%3E%3Cp%3EAlso%20linking%20with%3C/p%3E%3Cp%3EFood%20on%20Friday:%20BBQ%20@%20Carole's%20Chatter%3C/p%3E%3Cp%3ESpicy%20Grilled%20Chicken%3C/p%3E%3Cp%3Efrom%20Madhur%20Jaffrey's%20Quick%20and%20Easy%20Indian%20Cooking%3C/p%3E%3Cp%3EPreheat%20the%20grill%20and%20arrange%20grilling%20rack%20at%20least%205-6%20inches%20from%20the%20heat%20source.%20%20Set%20the%20heat%20at%20medium-high.%3C/p%3E%3Cp%3ECombine%20all%20the%20ingredients%20for%20the%20spice%20paste%20in%20bowl%20and%20mix%20well.%20Rub%20the%20paste%20over%20chicken%20as%20evenly%20as%20possible.%20Arrange%20the%20chicken%20pieces%20on%20the%20grill%20in%20a%20single%20layer%20with%20fleshier%20parts%20up%20and%20skin%20down.%20%20Grill%20for%2010-12%20minutes%20or%20until%20browned.%20You%20may%20need%20to%20rearrange%20some%20of%20the%20pieces%20so%20that%20brown%20evenly.%20%20Turn%20the%20pieces%20over%20and%20cook%20the%20second%20side%20the%20same%20way.%3C/p%3E%3Cp%3ENotes:%20I%20used%20the%20specified%20amount%20of%20cayenne%20(1/2%20tsp)%20and%20thought%20that%20more%20could%20be%20used.%20%20Started%20the%20chicken%20baking%20in%20the%20oven%20at%20350%20for%20about%2015-20%20minutes.%20%20Finished%20on%20the%20grill.%20%20Served%20with%20Yogurt%20with%20Tomato%20&%20Cucumber%20(below).%3C/p%3E%3Cp%3EYogurt%20with%20Tomato%20and%20Cucumber%3C/p%3E%3Cp%3Efrom%20Madhur%20Jaffrey's%20Quick%20and%20Easy%20Indian%20Cooking%3C/p%3E%3Cp%3E2%20cups%20plain%20yogurt%3C/p%3E%3Cp%3E1/2-3/4%20tsp%20salt%3C/p%3E%3Cp%3Efreshly%20ground%20black%20pepper%3C/p%3E%3Cp%3E1/8%20tsp%20cayenne%20pepper%3C/p%3E%3Cp%3E1/2%20tsp%20ground,%20roasted%20cumin%20seeds%3C/p%3E%3Cp%3E1%20small%20tomato,%20cut%20in%20a%20small%20dice%3C/p%3E%3Cp%3Eabout%20a%204%22piece%20of%20cucumber,%20peeled%20and%20cut%20in%20a%20small%20dice%3C/p%3E%3Cp%3EPut%20the%20yogurt%20into%20a%20bowl.%20Beat%20lightly%20with%20a%20fork%20until%20smooth.%20%20Add%20the%20remaining%20ingredients%20and%20mix%20well.%3C/p%3E%3Cp%3ENotes:%20Half%20of%20a%20recipe%20was%20more%20than%20enough%20for%203%20leg%20quarters.%20%20Used%20ground%20cumin%20instead%20of%20roasting%20and%20grinding%20cumin%20seeds.%3C/p%3E){kind=link}
