Ingredientes

  • 1 pkt frzn broccoli, cooked and liquid removed Or possibly other frzn vegetable of your choice
  • 1 c. lowfat sour cream
  • 1 c. cottage cheese, creamed
  • 1/2 c. Bisquick baking mix
  • 1/4 c. butter, melted
  • 2 x Large eggs
  • 1 x tomato, thinly sliced
  • 1/4 c. Parmesan cheese, grated

Direcciones

  1. Heat oven to 350 degrees.
  2. Grease 9" pie plate.
  3. Spread broccoli in plate.
  4. Beat lowfat sour cream, cottage cheese, baking mix, margarine and Large eggs till smooth, 15 seconds in blender on high or possibly 1 minute with hand beater.
  5. Pour into plate.
  6. Top with tomatoes; sprinkle with Parmesan cheese.
  7. Bake till knife inserted between center and edge comes out clean, about 30 min.
  8. Cold 5 min.
  9. 6-8 servings.
  10. Note: 8 ounces of frzn asparagus spears, cooked and liquid removed can be substituted for the broccoli.
  11. High Altitude (3500 to 6500 feet): Use pie plate, 10 x 1 1/2 inches. Bake about 35 min.
