Ingredientes

  • 1 c. finely grated carrots
  • 3/4 c. uncooked instant rice
  • 2/3 c. shredded mild cheddar cheese
  • 1/4 c. minced green onion
  • 1/2 tsp dry basil
  • 1 1/2 c. lowfat milk
  • 3/4 c. Bisquick
  • 3 x Large eggs (or possibly 3/4 c. egg substitute)
  • 1/2 tsp salt
  • 1/4 tsp pepper

Direcciones

  1. Grease 9-inch pie plate. Mix carrots, rice, cheese, onion and basil. Spread this mix in bottom and sides of pie plate to create "crust."
  2. Beat lowfat milk, Bisquick, Large eggs, salt and pepper till smooth (15 seconds in blender on high, or possibly one minute with hand beater). Pour over "crust" in pie plate.
  3. Bake at 400 degrees for 30 to 35 min (set pie plate on cookie sheet in oven).
  4. It is done when knife inserted between center and edge comes out clean.
  5. Cold 5 - 10 min.
  6. Makes 5-6 servings
