Impossible Cheesecake

Ingredientes

  • 3/4 c. sugar
  • 1/2 c. Bisquick baking mix
  • 2 x Large eggs
  • 16 ounce cream cheese, cut in 1-inch cubes
  • 2 tsp vanilla
  • 1/2 tsp lemon peel, grated
  • 1 c. lowfat sour cream
  • 2 Tbsp. sugar
  • 2 tsp vanilla

Direcciones

  1. Heat oven to 350 degrees.
  2. Grease 9" pie plate.
  3. Place 3/4 c. sugar, baking mix, Large eggs, cream cheese, 2 teaspoon vanilla and lemon peel in blender container. Blend on high speed, stopping blender occasionally to stir, till smooth about 3 min.
  4. Pour into pie plate.
  5. Bake just till puffed and center is dry, about 30 min. (Don't overbake).
  6. Mix lowfat sour cream, 2 Tbsp. sugar and 2 Tsp. vanilla. Spread carefully over top of cake, cold.
  7. Chill till chilled, at least 3 hrs.
  8. Serve with sweetened strawberries if you like.
