Indian spiced rice and peas

Ingredientes

  • 2 lbs 8 oz green split peas
  • 2 lbs raw brown rice
  • 1 gallon water
  • 2 lbs 8 oz chopped onions
  • 1/3 cup olive oil
  • 4 Tbsp minced garlic
  • 3 -4 Tbsp ground cumin
  • 8 oz chopped pimento
  • 1/4 cup salt reduced soy sauce
  • pepper (to taste)

Direcciones

  1. In a large heavy pot with a tight fitting lid, combine split peas, rice, water, onions, oil, garlic and cumin.
  2. Bring to a boil, turn heat to very low, cover and cook for 1 hour or until water is absorbed.
  3. Add 1 - 2 cups more water if necessary.
  4. Stir in the pimento, soy sauce and pepper to taste.
