14 de Marzo de 2012I made this last week. It is called The Spotted Dog. It tasted wonderful. Sort of like a biscuit, but with raisins in it and a tad sweeter. Your pictures look great! Thanks for sharing with us.1 reply
%3C/p%3E%3Cp%3EAlso%20I'm%20so%20happy%20to%20announce%20that%20I%20have%20received%20my%20first%20ever%20blogger%20Award%20!%3C/p%3E%3Cp%3EChristy%20of%20My%20Kitchen%20Flavors%20-%20Bon%20Apetite%20has%20been%20so%20kind%20enough%20to%20send%20me%20a%20Versatile%20Blogger%20Award.%20Thank%20you%20so%20much%20Christy,%20you%20simply%20made%20my%20day!!%3C/p%3E%3Cp%3EToday%20I%20thought%20of%20sharing%20a%20simple%20and%20easy%20bread%20recipe%20called%20the%20Irish%20Soda%20bread.%3C/p%3E%3Cp%3EIrish%20Soda%20bread,%20as%20the%20name%20suggests%20used%20Baking%20Soda%20as%20the%20raising%20agent%20instead%20of%20yeast.%20It%20can%20be%20made%20plain,%20or%20filled%20with%20nuts%20or%20dry%20fruits%20or%20even%20made%20savoury%20using%20caraway%20seeds%20or%20crushed%20peppercorns.%20I%20made%20a%20sweet%20soda%20bread%20by%20adding%20dried%20Cranberries%20and%20we%20had%20it%20for%20breakfast%20along%20with%20some%20butter%20and%20a%20nice%20hot%20cup%20of%20tea.%20Later%20on%20we%20had%20it%20with%20some%20Red%20Wine%20and%20that%20combo%20was%20good%20too%20;-)%3C/p%3E%3Cp%3EThe%20first%20channel%20I%20ever%20saw%20after%20having%20reached%20US%20was%20the%20Food%20Network%20channel.%20I%20love%20watching%20cookery%20shows%20but%20to%20have%20an%20entire%20channel%20showing%20food%20shows%2024x7%20was%20like%20a%20dream%20come%20true.%3C/p%3E%3Cp%3EOn%20one%20such%20occasion%20I%20happened%20to%20make%20note%20of%20this%20Irish%20Soda%20bread%20recipe%20by%20Ina%20Garten%20featured%20on%20her%20Barefoot%20Contessa%20-%20Back%20to%20Basics%20show.%20It%20looked%20so%20easy%20to%20prepare%20that%20I%20was%20just%20tempted%20to%20make%20it%20one%20weekend.%20The%20moment%20I%20woke%20up%20I%20went%20to%20go%20over%20the%20recipe%20again,%20make%20changes%20as%20per%20my%20requirements%20and%20bake%20away.%20When%20Manish%20woke%20up,%20the%20house%20was%20smelling%20heavenly%20and%20he%20couldn't%20wait%20to%20eat!!%3C/p%3E%3Cp%3EThough%20I%20followed%20the%20recipe%20by%20Barefoot%20Contessa,%20I%20found%20her%20amount%20for%20the%20bread%20dough%20too%20much%20for%20the%20both%20of%20us,%20so%20I%20took%20a%20risk%20and%20made%20several%20changes%20from%20the%20original%20recipe,%20but%20it%20turned%20out%20pretty%20good%20nevertheless!%20And%20as%20she%20suggests%20in%20her%20show,%20its%20a%20much%20easier%20version%20of%20making%20bread%20where%20there%20is%20no%20kneading,%20no%20waiting%20for%20the%20yeast%20to%20rise%20and%20so%20on.%3C/p%3E%3Cp%3EIrish%20Soda%20Bread%20Recipe%3C/p%3E%3Cp%3ERecipe%20source:%20BarefootContessa-Food%20Network%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Preheat%20Oven%20to%20375F%3C/p%3E%3Cp%3E2.%20Whisk%20together%20the%20dry%20ingredients:%20All%20purpose%20flour,%20baking%20soda,%20baking%20powder,%20sugar%20and%20salt.%3C/p%3E%3Cp%3E3.%20Break%20the%20butter%20into%20cubes%20and%20mix%20it%20well%20into%20the%20dry%20ingredients%20forming%20a%20coarse%20texture.%3C/p%3E%3Cp%3E4.%20Beat%20together%20the%20egg%20with%20the%20buttermilk%20and%20mix%20it%20slowly%20into%20the%20dry%20ingredients%20and%20blend%20it%20all%20together%20with%20a%20blender%20making%20a%20smooth%20and%20lightly%20wet%20and%20sticky%20dough.%3C/p%3E%3Cp%3E5.%20Add%20the%20cranberries%20and%20orange%20extract/zest%20and%20mix%20well.%3C/p%3E%3Cp%3E6.%20Lightly%20flour%20your%20working%20surface%20and%20place%20the%20dough%20on%20it,%20add%20more%20flour%20over%20the%20dough%20and%20mildly%20knead%20the%20dough%20until%20smooth.(Do%20not%20over%20knead).%3C/p%3E%3Cp%3E7.%20Lightly%20brush%20the%20top%20of%20the%20dough%20with%20little%20melted%20butter%20to%20give%20a%20nice%20brown%20crust.%3C/p%3E%3Cp%3E8.%20Place%20the%20dough%20on%20a%20baking%20sheet%20and%20make%20an%20X%20shaped%20cut%20in%20the%20centre%20of%20the%20dough%20(this%20allows%20the%20dough%20to%20rise%20and%20spread%20well)%20and%20place%20it%20on%20the%20middle%20rack%20of%20your%20oven.%3C/p%3E%3Cp%3E9.%20Bake%20for%2040-45%20mins%20until%20a%20toothpick%20inserted%20into%20the%20dough%20comes%20out%20clean%20and%20also%20the%20loaf%20should%20sound%20hollow%20when%20tapped.%3C/p%3E%3Cp%3E10.%20Remove%20and%20place%20it%20on%20a%20cooling%20rack%20for%2015-20%20mins.%20Cut%20the%20loaf%20into%20slices%20and%20serve%20warm%20with%20butter.%3C/p%3E%3Cp%3ESuggestions:%20You%20can%20even%20make%20chive%20butter%20biscuits%20with%20the%20same%20batter%20by%20dividing%20the%20batter%20into%20smaller%20portions%20for%20the%20biscuits.%20(%20you%20can%20adjust%20the%20amount%20of%20sugar%20as%20per%20your%20wish)%3C/p%3E%3Cp%3EAgain%20coming%20back%20to%20my%20award,%20it%20would%20have%20never%20been%20possible%20to%20maintain%20this%20blog%20if%20it%20hadn't%20been%20for%20the%20support%20and%20interest%20you%20all%20have%20shown%20in%20my%20little%20space%20here.%20I%20enjoy%20each%20minute%20here%20and%20want%20to%20share%20more%20and%20more%20recipes%20with%20you%20all.%20So%20a%20big%20Thank%20yo
